These bacon wrapped smokies are sweet, salty, and slightly spicy, baked in the oven until sticky and caramelized. An easy, crowd-pleasing party appetizer made with mini smokies, bacon, and brown sugar.
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or foil.
In a small plate, mix together the brown sugar and cayenne pepper until evenly combined.
Cut the bacon in half, coat each piece on both sides in the sugar mixture, then wrap each mini smoky with one piece of bacon and secure with a toothpick.
Place the wrapped smokies seam-side down on the prepared baking sheet.
Sprinkle the remaining brown sugar mixture evenly over the smokies.
Bake for 25–30 minutes, until the bacon is cooked and the sugar is bubbly and caramelized.
Notes
Snug Wraps Matter: I like to wrap the bacon tightly around each smoky so it crisps evenly and stays put while baking.Even Sugar Coating: I like to press the bacon into the brown sugar mix on both sides so the sweetness melts into a sticky layer instead of falling off.Watch the Sugar Closely: I keep an eye on them toward the end so the sugar caramelizes without burning.Let Them Set Before Serving: I like to rest them for 5 minutes so the caramel coating thickens slightly and clings better when you pick them up.
