This chicken cabbage salad combines rotisserie chicken, crisp red cabbage, cucumber, carrot, and parsley with a creamy Dijon dressing. It comes together in 15 minutes for an easy lunch or light dinner.
Add the 500 g red cabbage, finely shredded, 200 g cooked rotisserie chicken, diced, ½ English cucumber, thinly sliced, 1 medium carrot, shredded, and 2 tablespoons fresh parsley, chopped, to a large mixing bowl.
In a small bowl, whisk together the 100 g full-fat plain Greek yogurt, 1 tablespoon Dijon mustard, 1 teaspoon kosher salt, ½ teaspoon ground black pepper, 1 tablespoon honey, 2 tablespoons extra virgin olive oil, and the juice of ½ lemon until smooth and creamy.
Pour the creamy Dijon dressing over the chicken cabbage salad and toss until every ingredient is evenly coated.
Serve immediately for maximum crunch, or chill for 15–20 minutes if you want the flavors to meld.
