In a mortar, add garlic, ginger and salt. Crush them.
Add parsley or coriander and crush them.
Add pepper, cumin, oregano, cinnamon powder, turmeric and cardamom powder, crush and combine the ingredients.
Add lemon juice, combine and crush them until smooth.
Add wine and water, crush and combine until you have a smooth marinade.
Cut the chicken into small pieces.
Place the chicken pieces in a large bowl and pour the marinade over them.
Move and coat the chicken pieces with the marinade paste.
Cover the bowl and let it marinate in the refrigerator for at least 12 hours for the flavors to meld.
Cut ¼ red bell pepper into small pieces and place in a beaker.
Add garlic cloves, salt, cumin, paprika, chili pepper, vinegar and sunflower oil.
Blend the ingredients with a hand blender until combined and smooth.
Place the Red Mojo Sauce in a small bowl. Set aside.
Remove the chicken from the fridge, thread the marinated chicken pieces onto skewers and place them on a plate with a kitchen paper towel.
Heat the grill pan and add oil.
Place the chicken skewers in the grill pan, add salt to taste, and grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the edges.
Remove from the grill and place on a large plate.
Serve the chicken skewers with fried potatoes and red mojo sauce.
