These double chocolate chip cookies are soft in the center, lightly crisp at the edges, and filled with cocoa powder and chocolate chips. This easy double chocolate chip cookie recipe bakes in just 10 minutes for a quick homemade treat.
Preheat the oven to 355°F / 180°C (320°F convection / 160°C fan) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the 75 g unsalted butter, 100 g brown sugar, and100 g granulated sugar and mix until smooth. Add the 1 lager egg, 1 egg yolk, and 1 tsp vanilla extract, then beat until the mixture looks creamy and well combined.
Sift in the 140 g all-purpose flour, 35 g cocoa powder, 1 tsp baking powder, and ¼ tsp salt, then gently fold the dough until just combined. Stir in the 170 g chocolate chips, reserving a few to press on top if you like.
Scoop the dough onto the prepared baking sheet, leaving about 2 inches (5 cm) between each cookie. Press a few extra chocolate chips on top, then bake for 10 minutes, until the edges are set but the centers still look slightly soft.
Let the cookies rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Mix the Dough Gently: I like to stop folding as soon as the dry ingredients disappear because overmixing can make the cookies dense instead of soft.Chill the Dough if Needed: If the dough feels very soft, I sometimes chill it for about 30 minutes so the cookies spread less and bake a little thicker.Watch the Bake Time: The centers should still look slightly soft when you remove the cookies from the oven. They will continue to set as they cool.
