These easy apple fritters are made with blended apple and yogurt for a soft, smooth center and lightly crisp edges. No yeast needed, quick to prepare, and coated in sugar while warm.
Peel and chop the apple, then blend it in a food processor until completely smooth.
In a large bowl, whisk together 1 large egg, 1 teaspoon vanilla extract, 3 tablespoons granulated sugar, ¼ teaspoon salt, and ½ cup (125 g) plain yogurt until well combined. Add 2 tablespoons of vegetable oil and mix again.
Add 2¾ cups (350 g) all-purpose flour and 1½ teaspoons (6 g) baking powder, then fold gently until a thick, smooth batter forms. Add the blended apple and fold until evenly combined.
Pipe small portions of batter into the hot oil, cutting them off with scissors. Fry for about 4 minutes, turning as needed, until golden brown and cooked through.
Remove the fritters with a slotted spoon and place them on paper towels to drain excess oil.
While still warm, roll the fritters in granulated sugar until fully coated. Serve immediately while warm and crisp.
