This easy balsamic chicken is tender, juicy, and coated in a lightly sweet, tangy glaze. Made with a simple marinade and baked in the oven, it’s a reliable dinner that comes together with very little effort.
In a large bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, garlic, Italian seasoning, paprika, cayenne pepper, salt, and black pepper until well combined.
Pat the chicken breasts dry with paper towels, then add them to the marinade, turning to coat evenly. Marinate for at least 30 minutes, turning once for even flavor.
Transfer the chicken to a baking dish and pour the remaining marinade over the top.
Bake uncovered for 22–25 minutes, until the chicken is cooked through and the sauce is slightly reduced.
Remove from the oven and garnish with chopped parsley before serving.
Notes
Marinating Time: I like giving the chicken a full 30 minutes, so the balsamic flavor really sinks in without overpowering it.Uniform Thickness: I like to choose chicken breasts that are similar in size so they cook at the same rate and stay juicy throughout.Finish with Sauce: I always spoon the pan juices over the chicken before serving to keep everything moist and glossy.
