These chocolate muffins with cocoa powder are soft, rich, and filled with chocolate chunks. Easy to make and perfect when you want a simple homemade chocolate treat.
Preheat the oven to 400°F / 200°C (350°F convection / 180°C fan) and line a 12-cup muffin tin with paper liners.
In a large bowl, whisk together 150 g granulate sugar, 240 g self-rising flour, 60 g unsweetened cocoa powder, ½ tbsp baking powder, and ½ tsp salt.
In a separate bowl, whisk together 2 large eggs, 120 ml whole milk, 80 ml vegetable oil, and 1 tsp vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Fold in 115 g dark chocolate, roughly chopped.
Divide the batter evenly between the muffin liners, filling each about ¾ full.
Sprinkle 40 g milk chocolate, roughly chopped, over the tops.
Bake for 15 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Use Room Temperature Ingredients: I like bringing the eggs and milk to room temperature before mixing because they combine more easily and help create a smoother batter.Do Not Overmix: Stir only until the dry ingredients disappear.
