This easy coconut toast turns simple white bread into a warm bakery-style treat with a sweet golden coconut topping. It’s crisp at the edges, soft underneath, and perfect for breakfast, brunch, or coffee.
Preheat the oven to 350°F / 180°C (325°F convection / 160°C fan). Line a baking sheet with parchment paper and arrange 8 slices white sandwich bread in a single layer.
In a large bowl, mix 100 g unsalted butter, softened, 100 g granulated sugar, and 100 g sweetened shredded coconut until combined.
Add 1 large egg and 1 tsp vanilla extract, then stir until the mixture is creamy and evenly mixed.
Spread the coconut mixture evenly over the 8 slices white sandwich bread, making sure to cover the surface from edge to edge.
Bake for 15–20 minutes, or until the topping is golden and lightly crisp around the edges.
Let the coconut toast cool for a few minutes before serving warm.
