These no-bake homemade protein bars combine rice protein, peanut butter, dates, almonds, chia, and dark chocolate. They chill firm enough to cut into 12 bars and provide an estimated 20 g of protein per serving.
Line an 8-inch (20 cm) square pan with parchment paper, leaving enough overhang to lift out the mixture.
Place 100 g dates in a shallow bowl and cover them with boiling water. Soak for 10 minutes, then drain and reserve a little soaking water. Mash the dates into a thick paste.
Combine 125 g unflavored rice protein powder, 100 g ground almonds, and 75 g ground chia seeds in a large bowl. Add 400 g peanut butter , 2 tablespoons honey, and the date paste all at once. Mix until a thick, even dough forms.
Transfer the dough to the prepared pan. Press it firmly into an even layer, then refrigerate for 30 minutes.
Lift the chilled slab from the pan and cut it into 12 bars.
Combine 100 g dark chocolate with ½ tablespoon vegetable oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each one, until smooth.
Drizzle the melted chocolate over the bars. Refrigerate until the chocolate has set, then store the bars in the refrigerator.
