Cut the chicken breasts lengthwise to make thin pieces and put them in a big bowl.
Season the chicken breasts with onion powder, garlic powder, paprika, salt, and pepper. Add extra virgin olive oil and mix well until the spices coat the chicken.
Heat extra virgin olive oil in a large pot over medium-high heat.
Cook the chicken breasts until they are browned on both sides and fully cooked. Then, set them aside.
In the same pot, add chopped onion, season with salt, and cook until softened and translucent.
Grate garlic cloves with a grater, and add them to the pot along with tomato paste. Cook for another minute.
Chop the sun-dried tomatoes and add them to the pot. Cook for 2-3 minutes to boost the flavors.
Mix in oregano and paprika, and cook for 30 seconds to enhance the flavors.
Pour white wine into the pot to loosen any browned bits from the bottom.
Add chicken broth and bring to a simmer.
Reduce the heat to medium, pour in cream, and let it simmer for 7 minutes until it thickens slightly.
Stir in chopped basil and spinach until the spinach wilts.
Sprinkle grated Parmesan cheese over the sauce and mix until combined.
Return the cooked chicken breasts to the pot, coating them with the sauce. Simmer for an additional 3 minutes to blend the flavors.
Once the cheese melts and the sauce becomes creamy, serve the chicken with rice or your favorite side dish.
Garnish with fresh basil before serving. Enjoy this delicious Marry Me Chicken!
