This Marry Me Chicken recipe features tender chicken breasts cooked in a creamy, sun-dried tomato sauce with garlic, spinach, and Parmesan. It’s rich, flavorful, and perfect for a dinner that just might win someone’s heart.
Cut the chicken breasts lengthwise to make thin pieces and place them in a large bowl.
Season the chicken with onion powder, garlic powder, paprika, salt, and pepper. Add extra virgin olive oil and mix until evenly coated.
Heat extra virgin olive oil in a large pot over medium-high heat.
Sear the chicken on both sides until browned and fully cooked, then remove and set aside.
In the same pot, add chopped onion, season with salt, and cook until softened and translucent.
Grate the garlic and add it to the pot with the tomato paste. Cook for 1 minute.
Chop the sun-dried tomatoes and add them to the pot. Cook for 2–3 minutes.

Stir in chopped basil and spinach until the spinach wilts.
Add grated Parmesan cheese and stir until melted and combined.
Return the chicken to the pot and coat with the sauce. Simmer for 3 minutes.
Serve hot with rice or your favorite side dish, and garnish with fresh basil.
