This pan-fried red snapper has golden, crisp skin and tender, flaky flesh, finished with a warm garlic-parsley sauce. The complete seafood dinner is ready in just 10 minutes.
Pat 400 g skin-on red snapper fillets completely dry with paper towels. Season both sides evenly with ¼ tsp sea salt.
Heat 1 tbsp extra virgin olive oil in a nonstick or well-seasoned skillet over medium heat. Once the oil is hot, place the fillets skin-side down. Press them gently with a spatula for the first 20–30 seconds to keep the skin flat.
Cook the red snapper without moving it for about 2 minutes. Turn the fillets carefully and cook for approximately 2 minutes on the second side. The exact time will depend on thickness; the fish is ready when the flesh is opaque, separates easily with a fork, and reaches 145°F (63°C).
While the fish cooks, warm 60 ml extra virgin olive oil in a small saucepan over low heat. Add 3 cloves garlic, minced, 1 tbsp finely chopped fresh parsley , and ¼ tsp red pepper flakes. Let them sizzle gently for about 1 minute until aromatic without allowing the garlic to brown.
Carefully stir in 1½ tbsp white vinegar. Remove the saucepan from the heat immediately and swirl briefly to combine the garlic-parsley sauce.
Spoon the warm sauce over the pan-fried red snapper and serve immediately while the fish is hot and the skin is still crisp.
