This Salmon Florentine is creamy, colorful, and full of flavor. It comes together quickly with spinach, sun-dried tomatoes, and Parmesan, making it an easy dinner that still feels special.
Pat the salmon dry and season both sides with salt and black pepper.
Heat extra virgin olive oil and butter in a large skillet over medium heat. Sear the salmon for 2 minutes per side until golden, then remove and set aside.
Add minced garlic to the skillet and cook for about 30 seconds until fragrant. Stir in the spinach, season with salt and pepper, and cook until just wilted.
Add the sun-dried tomatoes, cherry tomatoes, and Italian seasoning, and cook for 1–2 minutes to release their flavor. Pour in the chicken broth and cream, bringing everything to a gentle simmer. Let it reduce for about 1–2 minutes, then stir in the Parmesan cheese until the sauce thickens and turns smooth.
Return the salmon to the skillet and spoon the sauce over the top. Simmer for 1–2 minutes to warm through, then serve hot.
