Heat a dry nonstick skillet. Pipe small rounds of batter into the skillet without adding oil or butter. When bubbles appear on the surface, flip the blinis and cook for 1 minute. Repeat with the remaining batter.
Assemble the 22 blinis using 100 g crème fraîche, 100 g smoked salmon, 50 g fish roe, Fresh dill, and Fresh chives. Combine the toppings in different arrangements and serve.
Notes
Dry skillet: Do not add oil or butter; a nonstick surface allows the small blinis to cook and release cleanly.Smooth batter: Whisk out any lumps before filling the squeeze bottle so the batter flows through the nozzle.Flip cue: Wait until bubbles appear on the surface before turning each blini, then cook the second side for 1 minute.Topping combinations: Distribute the crème fraîche, smoked salmon, fish roe, dill, and chives in different arrangements across the platter.
