Baked tuna and potato patties made with tuna in oil, mashed potato, Parmesan, garlic, and fresh herbs. They bake until lightly golden with a soft center.
290gcanned tuna in oil (2 x 5 oz / 145 g cans), drained
2green onionsfinely chopped
30gfresh parsleyfinely chopped
1garlic clovegrated

½teaspoonchili powder
1medium egg
40gParmesan cheesefinely grated
Instructions
Place 200 g potatoes and ½ teaspoon salt in a saucepan and cover with water. Boil for 15–20 minutes, until fork-tender. Drain well, mash until mostly smooth, and leave to cool slightly.
Add 290 g canned tuna in oil , drained, 2 green onions, finely chopped, 30 g fresh parsley, finely chopped, 1 garlic clove, grated, ½ teaspoon salt, ¼ teaspoon freshly ground black pepper, and ½ teaspoon chili powder to a large bowl. Mix until evenly combined.
Add the mashed potatoes and mix until combined. Whisk 1 medium egg separately, add it to the mixture, and stir in 40 g Parmesan cheese, finely grated, until evenly incorporated.
Shape the mixture into 8 equal patties and arrange them on a parchment-lined baking tray. Bake at 180 °C for 30 minutes, until lightly golden outside and soft in the center.

Drain the tuna thoroughly: Removing excess oil keeps the mixture firm enough to shape without adding a breadcrumb coating.Cool the potatoes slightly: Hot mashed potatoes can make the mixture softer and more difficult to handle.Keep the patties even: Similar-sized patties bake at the same rate and develop more consistent color.Flipping is optional: The tested batch was not flipped, but the patties may be turned halfway for more even browning.
