This homemade Banana Foster Pudding recipe is easy to make at home without using an oven. This dessert is a creamy Banana Pudding with layers of vanilla banana custard and banana foster. It has long been a favorite dessert in my family.

This Bananas Foster Banana Pudding has so much more flavor! Instead of just adding plain banana slices, I coat them in a mix of brown sugar and cinnamon, then caramelize them. It takes the taste to the next level!

3. In a medium bowl, mash ripe bananas with a fork, then add them to the egg yolk mixture and mix well.

Ingredients 

For the Banana Pudding:

  • 6 Egg Yolks
  • 125 g Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Ripe Bananas
  • 1 l Milk
  • 3 tablespoon Cornstarch
  • 20 ml Milk

For Bananas Foster:

  • 10 g Butter
  • 50 g Sugar
  • 1 Banana

Instructions

  • Separate six egg yolks from the white and place the egg yolks in a large bowl.
  • Add sugar and vanilla extract, and whisk together until well combined.
  • In a medium bowl, place ripe bananas and mash them with a fork, add mashed bananas to the egg yolk mixture, and mix well to combine.
  • Pour milk over the egg yolk banana mixture and whisk well to combine.
  • In a small bowl, place the cornstarch and add a little milk, mix well until the cornstarch dissolves completely.
  • Pour the milk and cornstarch mixture into the bowl with the egg yolk banana mixture and mix well to combine.
  • Pour the mixture into a saucepan and cook over low heat stirring constantly with a whisk to avoid the mixture sticking to the bottom of the saucepan.
  • Continue cooking for about 10 minutes or until the mixture thickens.
  • Pour the mixture into 4 dessert glasses, let them cool down and set.
  • Add butter to a pan and melt.
  • Add sugar over melted butter, mix well, and melt.
  • Cut a banana into pieces, add to the caramel, and mix well to combine until the banana is coated with caramel.
  • Add the bananas foster over banana pudding, then chill for at least 3 hrs or until set.

Notes

Mashing Bananas: Make sure the bananas are fully mashed so they blend smoothly into the pudding without any chunks.
Thickening: While cooking the pudding, whisk constantly on low heat until it thickens like custard and coats the back of a spoon.
Banana Timing: Don’t cook the banana slices in caramel too long, just a quick toss to coat them. Overcooking can make them mushy.
Optional Add-ins: For a classic Bananas Foster twist, add a splash of dark rum and flambé the bananas for a rich caramel flavor (be careful with flames!).
Layering: Let the pudding cool a bit before adding the caramelized bananas to keep the layers distinct.
Storage: You can store banana pudding in the fridge for up to 3 days, but for the best taste and look, enjoy it within 1-2 days.
