  • Oregano, Cumin & Smoked Paprika: Dried oregano gives that familiar Mediterranean feel, and I add cumin for warmth. Smoked paprika is optional, but it adds a deeper, slightly smoky note. 
  • Lemon, Salt & Pepper: Lemon lifts everything, and I find it keeps the flavor tasting fresh and bright. Salt and black pepper are simple, but they're what make the herbs and spices actually stand out.

How to Make Sheet Pan Chicken Kebabs 

1. Make the Flavor Base: Pulse onion, garlic, and parsley in a food processor until minced (not watery). Add to a bowl with ground chicken, oregano, cumin, smoked paprika, chili flakes, salt, pepper, olive oil, and lemon juice.

2. Mix Gently: Mix with your hands just until everything is combined.

3. Press and Shape: Press the mixture evenly into a ¾-1 inch thick rectangle on a prepared sheet pan. Cut into long 3 cm strips (keep them in place) and add small horizontal indentations on each strip.

4. Bake and Finish: Bake at 425°F / 220°C (400°F convection / 200°C fan) for 18-22 minutes until 165°F (74°C). Drain liquid, broil 2-3 minutes, rest 5 minutes, then slice and serve warm.

What to Serve with Sheet Pan Kebabs 

I usually serve these with warm pita or flatbread, a spoonful of tzatziki, and a simple tomato-cucumber salad. They're also great over rice with sliced red onion and an extra squeeze of lemon on top.

My Tips for Recipe Success

Use Chicken That Isn't Ultra-Lean: If the ground chicken is too lean, the kebabs can turn slightly firm. I prefer a standard ground chicken mix rather than 99% lean for better texture. 

Chill Before Shaping (If Needed): If the mixture feels very soft, I refrigerate it for 15-20 minutes before pressing it onto the pan. It makes shaping cleaner and helps the strips hold their edges. 

Use a Metal Pan, Not Glass: A metal sheet pan browns the bottom better. Glass dishes tend to steam the meat instead of giving that slight caramelization.

Storage

I store the cooled kebabs in an airtight container in the fridge for up to 4 days, and when reheating, I warm them in the oven at 350°F (175°C) so they stay tender instead of drying out.

Ingredients 

  • 900 g ground chicken
  • 1 medium onion
  • 6 cloves garlic
  • 20 g fresh parsley
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika - optional
  • ½ teaspoon chili flakes - optional
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon fresh lemon juice

Instructions

  • Preheat the oven to 425°F / 220°C (400°F convection / 200°C fan). Line a sheet pan with parchment paper.
  • Add 1 medium onion, 6 garlic cloves, and ⅓ cup (20 g) fresh parsley to a food processor. Pulse until very finely minced but not watery. If needed, gently squeeze out excess liquid.
  • In a large bowl, combine 2 lb (900 g) ground chicken, the processed mixture, 1 tablespoon dried oregano, 1 tablespoon ground cumin, 1 teaspoon smoked paprika (optional), ½ teaspoon chili flakes (optional), 1 teaspoon salt, ½ teaspoon freshly ground black pepper, 2 tablespoon extra virgin olive oil, and 2 tablespoon fresh lemon juice. Mix gently until just combined. Do not overmix.
  • Transfer the mixture onto the prepared sheet pan and press it evenly into a large rectangle about ¾-1 inch thick.
  • Use a knife or dough scraper to cut the rectangle into long strips about 3 cm wide, cutting all the way down to the pan but keeping the strips in place.
  • Make small horizontal indentations along each strip to give them a traditional grilled kebab appearance.
  • Bake on the middle rack for 18-22 minutes, until the internal temperature reaches 165°F (74°C).
  • Remove the sheet pan from the oven, drain the liquid, move to the upper rack, and broil for 2-3 minutes until lightly charred on top. Watch carefully.
  • Let rest for 5 minutes, then slice fully along the cut lines.
  • Serve warm with pita or flatbread, tzatziki, tomato-cucumber salad, sliced red onion, and an extra squeeze of lemon if desired.

Notes

Pulse Until Fine, Not Watery: I like to pulse the onion, garlic, and parsley just until very finely minced. If it turns too wet, I gently squeeze out the excess so the mixture doesn't get loose. 
Even Thickness Matters: For the best texture, I press the meat into an even ¾–1 inch layer so it cooks evenly and stays tender. 
Cut Before Baking: I slice the strips all the way down before they go into the oven because I find it gives cleaner edges and makes serving easier later. 
Broil for Color: I always finish under the broiler for a couple of minutes since I get the nicest color and that slightly grilled taste on top.

    I made these sheet pan ground chicken kebabs for meal prep this week and they turned out so good. Pressing the mixture into one slab and cutting it into strips was much easier than shaping individual kebabs, and they cooked evenly.
