Chicken skewers always taste 10x better when I make them like Greek chicken souvlaki, juicy, and packed with flavor. Recipe includes a how-to video!

I started making chicken skewers this way after trying Greek chicken souvlaki at a friend's cookout, and I've been hooked ever since.
The marinade is simple: Greek yoghurt, balsamic, garlic, honey, and herbs.
It makes the chicken so juicy and flavorful, especially after a quick char on the grill.

I usually set everything out, souvlaki, fresh tomato, onion, parsley, and tzatziki, so everyone can build their own wrap.
It's unfussy, full of flavor, and always hits the spot. This is the chicken souvlaki recipe I come back to again and again.

🧾Greek Chicken Souvlaki Ingredients
Here's what you need to make this Greek Chicken Souvlaki recipe:
- Chicken Breast: I like using chicken breast here because it cooks quickly and takes on the marinade beautifully.
- Pita Breads: These are the soft base for the wrap. I warm them just before serving.
- Tzatziki Dip: I always serve this cold and generous, it brings a creamy contrast that's refreshing with the warm grilled chicken.
- Tomatoes: I use ripe, juicy tomatoes sliced thin to add freshness and a bit of sweetness.
- Onion: I like using red or white onion, sliced very thin. It gives the wrap a little bite and crunch.
- Parsley: Chopped fresh parsley brightens everything up.
For the Marinade:
- Greek Yoghurt: This is what makes the chicken super tender and gives the marinade its creamy texture.
- French Mustard: It adds a mild, tangy sharpness that cuts through the richness.
- Extra Virgin Olive Oil: I always go for good extra virgin olive oil.
- Balsamic Vinegar: This adds sweetness and acidity in one go, perfect for depth.
- Honey: Just a touch for balance, it softens the sharp edges of the garlic and vinegar.
- Garlic Cloves: I finely mince the garlic so it blends in well and adds rich flavor to every bite.
- Dry Oregano: Classic in Greek marinades. It's bold, earthy, and perfect here.
- Fresh Mint (leaves only): This lifts everything with a pop of freshness.
- Salt and Black Pepper: Essential for bringing all the other flavors forward.

👩🏻🍳How to Make Greek Chicken Souvlaki
These step-by-step instructions and photos will help you visualize how to make this recipe. See the recipe card for a printable version of this recipe.

1. Cut the chicken breasts into bite-sized pieces and place them in a large bowl.
2. Combine the chicken with Greek yoghurt, mustard, extra virgin olive oil, balsamic vinegar, honey, garlic cloves, oregano, mint, salt, and pepper. Mix well, then cover and refrigerate for at least 2 hours.
3. Thread the marinated chicken pieces onto skewers.
4. Grill the chicken on medium-high heat for 6-8 minutes, turning until golden and fully cooked.

📖Variations
- Use Chicken Thighs: If you prefer juicier, more flavorful meat, boneless chicken thighs work just as well as breast.
- Try a Spicy Marinade: Add chili flakes or a spoonful of harissa to the marinade for a little kick.
- Make it a Bowl: Skip the pita and serve the grilled chicken over rice or couscous with all the toppings on the side.
- Go Dairy-Free: Swap the yoghurt for a dairy-free version and use hummus instead of tzatziki.
- Add Grilled Veggies: Zucchini, bell peppers, or eggplant slices grilled alongside the chicken make a great addition.
🍽 What to Serve with Greek Chicken Souvlaki
I like to keep things fresh and simple when serving Chicken Souvlaki, warm pita breads, and tzatziki sauce are always a must.
A simple tomato salad with a splash of extra virgin olive oil and vinegar goes perfectly with the grilled flavors.
If I'm making a full meal, I'll add a side of crispy potato wedges or roasted lemon potatoes, they always disappear fast.
A handful of olives, a few slices of feta, and maybe some warm hummus on the table make it feel complete without much extra work.

💭Tips for Recipe Success
Soak Wooden Skewers in Advance: I always soak them in water for at least 30 minutes before grilling to keep them from burning or splintering.
Cut the Chicken Evenly: Uniform pieces cook at the same rate, so nothing ends up dry or underdone.
Let the Chicken Rest Before Serving: A short 3-5 minute rest after grilling helps keep the juices locked in and the chicken extra tender.
Grill in Batches if Needed: If you're cooking a lot, avoid crowding the grill. It helps the chicken cook more evenly and gives you a better color.
Store Leftovers Separately: I keep the chicken, veggies, pita, and tzatziki in separate containers. The chicken lasts well in the fridge for up to 3 days and reheats nicely in a pan or microwave.
