Ingredients 

  • 4 Eggs - Room temperature
  • 200 g Sugar
  • 1 teaspoon Vanilla
  • 50 ml Vegetable Oil
  • 125 g Yogurt
  • 300 g Flour
  • 8 g Baking Powder
  • ⅛ teaspoon Salt
  • 50 g Raisins
  • 2 Apples - Sliced

Instructions

  • Preheat the oven to 350°F (180°C), then grease a loaf pan with butter and dust it lightly with flour.
  • In a large mixing bowl, beat the eggs, sugar, and vanilla extract with an electric hand mixer until the mixture turns light and fluffy.
  • Pour in the vegetable oil and whisk until it blends smoothly into the mixture.
  • Add the yogurt and mix well until fully combined and creamy.
  • Sift the flour, baking powder, and salt into the wet mixture, folding gently with a spatula until just combined.
  • Fold in the raisins, making sure they are evenly spread throughout the batter.
  • Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
  • Thinly slice the apples and press a third of each slice gently into the top of the batter.
  • Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 30 minutes before transferring it carefully to a wire rack.
  • Once cooled, slice the loaf and serve.

Prep the Apples Early: I like to slice them before mixing the batter so everything goes straight into the pan without waiting.
Check for Doneness: I usually test with a toothpick at 45 minutes, since my oven sometimes bakes faster.
