  • Vegetable Oil: I use vegetable oil to keep the cake moist and tender. Unlike butter, it doesn’t solidify when cooled, so the cake stays soft. You can also use extra virgin olive oil for a different flavor.
  • Yogurt: Yogurt adds moisture and creates a tender crumb. Its slight tang balances the sweetness and works with the baking powder to help the cake rise.

  • 300 g Flour

  • In a large mixing bowl, beat the eggs, sugar, and vanilla extract together with an electric hand mixer until the mixture is light and fluffy.
  • Pour the vegetable oil and whisk until combined.
  • Add the yogurt and mix well until fully combined.
  • Sift together the flour, baking powder, and salt to the wet mixture, folding gently until just combined.
  • Fold the raisins into the batter, ensuring they are evenly distributed.
  • Pour the batter into the prepared loaf pan grease with butter and dust with flour.
  • Thinly slice the apple and gently press a third of each slice into the batter.
  • Bake in the preheated oven at 180°C (350°F) for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
