This Easy Apple Strudel is surprisingly easy to bake at home. With ready made sheets of filo pastry, apples, and a touch of cinnamon, you get a golden, flaky dessert that tastes as good as it looks.

The first time I baked this easy apple strudel, I couldn't believe how something so quick could taste so delicious. The filo pastry turns into golden crispy layers, and the kitchen filled with the smell of apples and cinnamon. 

What makes me keep coming back to this strudel recipe is the balance; the soft, sweet apple filling against the crisp filo pastry and nutty crunch of walnuts. This apple strudel is wonderful straight from the oven, but it's just as good dressed up with a scoop of ice cream, a dusting of powdered sugar, or even a drizzle of caramel.

  • Apples: I love grating the apples because they soften evenly and make the filling almost melt into the pastry. Granny Smiths are my favorite for their tart balance. 
  • Filo Pastry: Using ready-made sheets saves time and still gives you that bakery-style crisp bite in every layer. 
  • Walnuts, Sugar & Cinnamon: The mix adds a sweet crunch and warmth that ties the filling together. I like to sprinkle it between the layers for extra flavor. 
  • Butter: Brushing melted butter over each filo sheet is what makes the pastry flaky, golden, and irresistible.

1. Cook the Apples: Peel, core, and grate the apples. Cook with brown sugar until soft and caramelized, then stir in cornstarch mixed with water. Let cool.

2. Prepare the Nut Mixture: Finely chop walnuts, then mix with brown sugar and cinnamon.

3. Assemble the Strudels: Layer three sheets of filo pastry with butter and walnut mixture. Add apple filling along one edge, roll tightly, and place on a tray. Repeat to make four strudels.

4. Bake: Cut each apple strudel into pieces, brush with butter, and bake at 180°C (350°F) for 40-45 minutes until golden and crisp.

💭Tips for Recipe Success

Caramelize the Apples Well: Let the apples cook long enough to deepen their flavor; it makes a big difference in the filling. 

Don't Overfill the Pastry: I've learned that using just the right amount of filling keeps the strudel from splitting and helps it bake evenly. 

Storage Tip: Leftovers keep in an airtight container for a day or two, but I like to reheat them in the oven to bring back the crispness.

This Apple Strudel wraps soft apples, crunchy walnuts, and cinnamon inside buttery filo pastry for a crisp, golden dessert that's easy to make and always a favorite.

Ingredients 

  • 1½ kg Apples
  • 100 g Brown Sugar
  • 100 ml Water
  • 1 tablespoon Cornstarch
  • 100 g Walnuts
  • 1 tablespoon Brown Sugar
  • ½ teaspoon Cinnamon Powder
  • 500 g Filo Pastry - 12 Sheets
  • 200 g Melted Butter

Instructions

  • Peel, core, and grate the apples.
  • In a medium saucepan, add the grated apples and brown sugar. Cook over medium heat until the apples are soft and caramelized, about 10 minutes.
  • Mix the cornstarch with water in a small bowl. Stir it into the apples and cook until the mixture thickens. Set aside to cool.
  • Chop the walnuts finely. Place them in a small bowl with brown sugar and cinnamon powder. Mix well until combined.
  • Preheat the oven to 350°F (180°C).
  • Place one sheet of filo pastry on a flat surface. Brush it lightly with melted butter, then sprinkle with some of the walnut mixture. Repeat the process with two more sheets to make three layers.
  • Spoon ¼ of the apple mixture along one edge of the stacked sheets. Roll up tightly to form a strudel and place it on a baking tray.
  • Repeat the process with the remaining sheets, walnut mixture, and apple filling to make four strudels.
  • Cut each strudel into four pieces. Brush the tops generously with melted butter.
  • Bake for 40-45 minutes until golden and crisp.
  • Let cool slightly before serving.

Notes

Choose the Right Apples: I like using Granny Smith because their tartness balances the sweet filling so well. 
Nut Texture: Sometimes I chop the walnuts a little chunkier when I want extra crunch in each bite. 
Best Served Warm: I find strudel tastes best fresh from the oven when the pastry is still crisp.
