Apple Hand Pies with Puff Pastry
Ingredients
- 2 Large Honeycrisp Apples - Peeled and diced
- 2 tablespoon Unsalted Butter
- 50 g Brown Sugar
- 1 teaspoon Ground Cinnamon
- 1 tablespoon Lemon Juice
- ½ teaspoon Cornstarch
- 1 tablespoon Water
- 1 sheet Puff Pastry
- 1 Egg
- 2 tablespoon Sugar
- 1 teaspoon Cinnamon
Instructions
- In a medium saucepan, melt the butter over medium heat. Add diced apples, brown sugar, cinnamon, and lemon juice. Cook until softened, about 5-6 minutes.
- Stir the cornstarch with water in a small bowl. Pour into the apple mixture and cook for 1 minute, until thickened. Remove from the heat and let cool.
- Roll out the puff pastry and cut into even rectangles.
- Spoon a little apple filling into the center of each rectangle.
- Brush the edges with egg wash before sealing.
- Place the pastry over the filling to form a hand pie, then press the edges with a fork to seal.
