This moist apple loaf cake is soft, fluffy, and filled with fresh apples, yogurt, and raisins. It’s an easy homemade loaf cake with a tender crumb and warm cinnamon flavor.
Preheat the oven to 350°F / 180°C (320°F convection / 160°C fan). Grease a loaf pan with butter and lightly dust it with flour.
In a large bowl, beat 4 large eggs, 200 g granulated sugar, and 1 tsp vanilla extract with an electric mixer until pale, light, and fluffy. Pour in 50 ml vegetable oil and 125 g plain yogurt, then whisk again until smooth and creamy.
Sift in 300 g all-purpose flour, 8 g baking powder, and ⅛ tsp salt. Fold the mixture gently with a spatula until no dry flour remains, then fold in 50 g raisins.
Pour the batter into the prepared loaf pan and smooth the top. Thinly slice 2 apples and gently press the slices into the batter.
Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden.
Let the apple loaf cake cool in the pan for 30 minutes, then carefully transfer it to a wire rack to cool completely before slicing and serving.
