Greek Lemon Rice Pilaf for Chicken and Mediterranean Bowls

There was a small taverna near the harbor where lemon rice always came next to grilled chicken. It wasn't elaborate, just dependable and balanced. That memory shaped how I make it now, simple steps, steady heat, and the rice simmered in broth with onion, garlic, and lemon juice then finished with herbs for that classic Greek lemon rice pilaf taste.

Most Greek lemon rice recipes are made with broth rather than water. The rice cooks gently, rests before fluffing, and finishes with butter and fresh herbs. The result is light, separate grains that pair perfectly with grilled chicken, salmon, meatballs, or any Mediterranean-style bowl.

Why You'll Love It

  • Fluffy, Not Mushy: The rice cooks up light and separate with a bright lemon finish.
  • Simple Ingredients: Made with pantry staples and fresh lemon for a clean Mediterranean flavor.
  • Pairs With Everything: Perfect alongside grilled chicken, salmon, meatballs, or inside a Mediterranean bowl.

Key Ingredients in Greek Lemon Rice

You'll find the exact measurements in the recipe card, but here's a closer look at key ingredients and why I use them.

  • Rice & Broth: Long-grain rice is what I use because it stays light and fluffy, and broth gives Greek lemon rice the flavor it needs.
  • Aromatics: I keep it simple with onion and garlic, chopping them small so they cook down gently without taking over.
  • Lemon & Butter: Fresh lemon juice and a little butter finish the rice at the end.
  • Parsley & Seasoning: Chopped parsley goes in last for a fresh finish, and I season with kosher salt and black pepper until it tastes right.

How to Make Greek Lemon Rice

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

How to Make Greek Lemon Rice

1. Sauté the Aromatics: Heat olive oil in a saucepan over medium heat. Add the chopped onion and cook until soft and translucent, then stir in the garlic and cook briefly until fragrant.

2. Toast the Rice: Add the rice and stir well so it lightly toasts and coats in the oil.

3. Simmer with Broth and Lemon: Pour in the broth, lemon juice, and season with salt and pepper, bring to a gentle boil, then reduce to low. Cover and cook until the liquid is absorbed and the rice is tender.

4. Rest, Fluff, and Finish: Remove from heat, add the butter, and let it sit covered for 5 minutes. Fluff gently with a spatula or fork, then fold in the parsley before serving.

What to Serve with Greek Lemon Rice

Greek lemon rice pairs perfectly with grilled chicken, baked salmon, lamb, or Mediterranean meatballs. It also works well inside a bowl with cucumber salad and tzatziki for a simple, balanced meal.

My Tips for Recipe Success

Rinse the Rice Well: I rinse the rice under cold water until the water runs clear so the grains cook up separate instead of sticky.

Keep the Heat Low and Steady: Once the broth reaches a gentle boil, I reduce it to low right away and avoid lifting the lid while it cooks.

Measure the Liquid Precisely: I stick to the exact broth-to-rice ratio so the texture turns out consistent every time, light, not heavy, and never dry.

Storage

Store the Greek lemon rice in an airtight container in the refrigerator for up to 4 days. Let it cool completely before sealing to prevent excess moisture. Reheat gently on the stovetop or in the microwave with a small splash of broth or water to keep the rice soft and fluffy.

  • ½ small onion - finely chopped
  • 2 cloves garlic - minced

Instructions

  • Heat 2 tablespoons olive oil in a medium saucepan over medium heat until shimmering. Add ½ small finely chopped onion and cook, stirring occasionally, until soft and translucent, about 3-4 minutes. Add 2 minced garlic cloves and cook, stirring constantly, until fragrant, about 30 seconds.
  • Stir in 1 cup long grain rice and cook, stirring frequently, until the grains look slightly translucent around the edges and are coated in the oil, about 1 minute.
  • Pour in 2 cups of chicken broth and 3 tablespoons fresh lemon juice, then add ½ teaspoon of kosher salt and ¼ teaspoon freshly ground black pepper, and mix well. Bring to a gentle boil over medium-high heat, then reduce the heat to low. Cover and cook until the liquid is absorbed and the rice is tender, 18-20 minutes.
  • Turn off the heat, add 1 tablespoon of butter, and let the rice sit, covered, for 5 minutes. Fluff gently with a spatula or fork until the rice is light and separated.
  • Stir in 2 tablespoons chopped fresh parsley. Taste and season with more salt, pepper, or a small squeeze of lemon juice as needed. Serve warm.

Notes

Let It Rest Before Fluffing: I keep the lid on for a full 5 minutes after cooking so the steam finishes the rice and the texture stays light.
Fluff Gently with a Spatula or Fork: Use a spatula or fork and lift the rice gently; I find it keeps the grains separate and prevents them from breaking.
