Egg Fried Rice is quick to make, full of flavor, and always feels like a comforting meal. Whenever I have leftover rice in the fridge, this is the first dish that comes to mind.

This easy egg fried rice quickly became a favorite of mine on nights when I wanted something fast but still homemade. Mixing the yolks into the rice before frying gave it a golden color and rich taste, while the vegetables added just enough freshness to balance it out.

Another thing I enjoy is how flexible it is; some days I keep it basic with peas and carrots, and other times I'll add extra vegetables or a bit of chicken. No matter how I change it, it always cooks up quickly and ends up being one of those meals everyone finishes without hesitation.

  • Eggs: I like to whisk the yolks into the rice first because it gives every grain a golden color and rich taste, while the whites stay light and fluffy when added later. 
  • Cooked Rice: I usually use day-old rice from the fridge; it fries better, doesn't clump, and always gives the dish that restaurant-style texture. 
  • Vegetables: Onion, carrot, and peas are my favorite trio here; they add sweetness, freshness, and just enough color to make the rice look inviting. 
  • Seasoning: A simple mix of salt and black pepper is all I use; it keeps the flavors clean and lets the eggs and rice really shine.

process 1-4

1. Separate the eggs and mix the yolks with the cooked rice until coated.

2. Sauté onion in oil for 1 minute, then add carrot, peas, salt, and pepper; cook 2 minutes, then set aside in a bowl.

3. In the same pan, fry the yolk-coated rice for 1 minute, then stir in the egg whites until cooked.

4. Return the vegetables, mix everything together, and serve hot.

Egg Fried Rice is filling on its own, but it also pairs well with roasted chicken, baked salmon, or even a fresh tomato salad for brightness. I also like serving it alongside dumplings or stir-fried vegetables when I want a bigger spread.

Use Day-Old Rice: I always cook this with rice that's been chilled in the fridge overnight; it fries up fluffy and never clumps. 

Work Quickly with the Eggs: Once the whites hit the pan, I keep stirring nonstop so they stay light and don't turn rubbery. 

Storage Tip: When I have leftovers, I reheat them in a pan with just a drizzle of oil; it brings the rice back to life in minutes.

Ingredients 

  • 3 Eggs
  • 300 g Cooked Rice
  • 2 tablespoon Vegetable Oil
  • ½ Yellow Onion - Finely chopped
  • 70 g Peas
  • ½ Carrot - Chopped
  • 1½ tsp Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Vegetable Oil

Instructions

  • In two separate bowls, separate the yolks from the whites of 3 eggs. Mix the yolks with the cooked rice until evenly coated.
  • In a large frying pan, heat 2 tablespoons of vegetable oil over medium heat. Add the finely chopped onion and cook for 1 minute until softened.
  • Stir in the chopped carrot, peas, salt, and black pepper. Cook for 2 minutes on medium heat, then transfer the vegetables to a bowl.
  • In the same pan, heat 1 tablespoon of vegetable oil over low heat. Add the rice coated with egg yolk and cook gently for 1 minute.
  • Pour in the egg whites and stir continuously until they are cooked through, about 1 minute.
  • Return the cooked vegetables to the pan and stir well until everything is evenly combined.
  • Transfer the egg fried rice to a serving plate and serve hot.

Notes

Separate the Eggs: I like mixing the yolks with the rice first so every grain gets a nice golden coating before it hits the pan.
Cook Vegetables Briefly: I only cook them for a couple of minutes so they stay bright and a little crisp.
Low Heat for Rice: I keep the heat gentle when frying the yolk-coated rice so it doesn’t stick or turn dry.
Final Mix: I always stir everything together quickly at the end so the flavors come together without overcooking the vegetables.
