Egg Fried Rice
Ingredients
- 3 Eggs
- 300 g Cooked Rice
- 2 tablespoon Vegetable Oil
- ½ Yellow Onion - Finely chopped
- 70 g Peas
- ½ Carrot - Chopped
- 1½ tsp Salt
- 1 teaspoon Black Pepper
- 1 tablespoon Vegetable Oil
Instructions
- In two separate bowls, separate the yolks from the whites of 3 eggs. Mix the yolks with the cooked rice until evenly coated.
- In a large frying pan, heat 2 tablespoons of vegetable oil over medium heat. Add the finely chopped onion and cook for 1 minute until softened.
- Stir in the chopped carrot, peas, salt, and black pepper. Cook for 2 minutes on medium heat, then transfer the vegetables to a bowl.
- In the same pan, heat 1 tablespoon of vegetable oil over low heat. Add the rice coated with egg yolk and cook gently for 1 minute.
- Pour in the egg whites and stir continuously until they are cooked through, about 1 minute.
