Mediterranean Shrimp Skewers with Lemon Garlic Marinade

These Mediterranean shrimp skewers are coated in a quick lemon garlic marinade with oregano, smoked paprika, and red pepper flakes. Grill them outside or cook them on a grill pan for a fast meal with juicy shrimp and lightly charred edges.

For me, shrimp skewers are the kind of meal that makes sense when the weather is warm, and I want dinner to feel light but still complete. In southern Spain, olive oil, garlic, lemon, and parsley are never far from the table, so this marinade feels very natural to me. It has the same simple seafood character I enjoy in Gambas al Ajillo and the same easy, shareable style as my Pinchos de Pollo. I like placing the skewers in the middle of the table with a few sides and letting everyone help themselves. 

When developing this recipe, I wanted the shrimp to taste bright and garlicky without covering their natural flavor. The smoked paprika adds gentle smokiness, the oregano brings an earthy note, and the red pepper flakes add a little heat. A short marinade seasons the shrimp without making them soft, while quick cooking over high heat keeps them juicy with lightly charred edges. It is a simpler grilling option when I do not want to prepare a full Spanish Seafood Paella, but it still has the fresh seafood flavor I enjoy in my Shrimp Scampi.

These ingredients work together to create the bright, smoky flavor that makes these shrimp skewers so good.

  • Large Raw Shrimp: I use large raw shrimp because they are easier to thread onto skewers and stay juicier on the grill. Choose shrimp of a similar size so they cook at the same rate. 
  • Extra Virgin Olive Oil and Lemon Juice: Olive oil helps the seasoning coat the shrimp evenly, while fresh lemon juice adds a clean, bright flavor without making the marinade heavy. 
  • Garlic and Oregano: Fresh garlic gives the marinade its strong savory base, and dried oregano adds the familiar Mediterranean flavor I want in this recipe. 
  • Smoked Paprika, Red Pepper Flakes, and Parsley: Smoked paprika adds color and gentle smokiness, while red pepper flakes bring mild heat. I finish the cooked shrimp with parsley for a fresh contrast. 

How to Make Grilled Shrimp Skewers

Follow these simple steps to prepare the shrimp and cook them in just a few minutes. You can find the complete printable recipe with measurements below.

1. Marinate the Shrimp: In a bowl, mix extra virgin olive oil, lemon juice, minced garlic, salt, pepper, oregano, smoked paprika, and red pepper flakes. Add the shrimp and toss to coat.

2. Let it Rest: Cover the bowl and refrigerate for 30 minutes to allow the shrimp to absorb the flavors.

3. Thread the Skewers: Thread the marinated shrimp onto the soaked skewers.

4. Grill: Heat an outdoor grill or a grill pan over medium-high heat and grill the skewers for 1 minute per side, until the shrimp are pink and just cooked through.

Helpful Swaps

  • Use regular paprika instead of smoked paprika for a milder flavor without the smoky finish. 
  • Replace the red pepper flakes with Aleppo pepper for gentler heat, or leave them out for a completely mild marinade. 
  • Fresh dill can replace the parsley if you prefer its slightly stronger herb flavor. 
  • Use a grill pan or cast-iron skillet when you do not have access to an outdoor grill. 

Tips for Mediterranean Shrimp Skewers

Dry the Shrimp Well: I always pat the shrimp dry before adding the marinade. This helps the oil and seasonings cling to the surface and gives the shrimp better color on the grill.

Thread Each Shrimp Twice: Pierce the shrimp through the thick end and again near the tail. This keeps each shrimp secure and stops it from spinning when you turn the skewers.

Remove Excess Marinade: Let the extra marinade drip back into the bowl before placing the skewers on the grill. Too much oil can cause flare-ups, and loose pieces of garlic may burn before the shrimp finish cooking.

Prepare the Sides First: The shrimp cook very quickly, so I make sure the plates, side dishes, and parsley are ready before I start grilling. This lets me serve the skewers while they are still hot and juicy.

Storage

I store leftover grilled shrimp in an airtight container in the refrigerator for up to 2 days. They are good served cold in a salad, or you can warm them gently in a skillet for a minute or two so they do not become rubbery.

What to Serve with Mediterranean Shrimp Skewers

I like serving these shrimp skewers with Greek Lemon Potatoes when I want a more filling dinner. For something lighter, add a Cucumber Avocado Feta Salad or my fresh Spanish Potato Salad. Warm pita, rice, or crusty bread also works well for catching any juices left on the plate.

Ingredients 
 

  • 500 g large raw shrimp - peeled and deveined

For the Marinade

  • 3 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 3 cloves garlic - finely minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • finely chopped fresh parsley

Instructions

  • Place 500 g large raw shrimp in a large bowl. Add 3 tbsp extra virgin olive oil, 1 tbsp fresh lemon juice, 3 cloves garlic , finely minced, ½ tsp salt, ¼ tsp black pepper, 1 tsp dried oregano, 1 tsp smoked paprika, and ¼ tsp red pepper flakes. 
  • Toss the shrimp until evenly coated, then cover and marinate in the refrigerator for 30 minutes. 
  • Thread the shrimp onto soaked wooden skewers or metal skewers. Heat an outdoor grill or grill pan over medium-high heat.
  • Grill the shrimp for 1 to 1½ minutes per side, or until pink, opaque, and just cooked through. Transfer to a serving plate and finish with finely chopped fresh parsley. 

Notes

Use Raw Large Shrimp: I always use raw shrimp rather than precooked shrimp because they stay much more tender once grilled. Choose shrimp of a similar size so they cook evenly. 
Limit the Marinating Time: Thirty minutes gives the shrimp plenty of flavour. I do not leave them in the lemon marinade for several hours because the acid can begin to change their texture. 
Soak Wooden Skewers: When I use wooden skewers, I soak them for at least 30 minutes. Metal skewers can be used immediately. 
Watch the Shrimp Closely: Shrimp cook very quickly. I remove them once they turn pink and opaque with a loose C-shape, as tightly curled shrimp can become firm and rubbery.
