These grilled shrimp skewers are quick, full of Mediterranean flavors, and always a hit. They cook in no time, maybe a minute per side. That's all. The smell is unreal. Someone always sneaks one before I even get them on the table.

I toss the shrimp in garlic, lemon, and smoky paprika, then thread them onto skewers and grill until they're juicy and slightly charred. When I want something quick that still feels like a proper dinner, this is what I make.

1. Marinate the Shrimp: In a bowl, mix extra virgin olive oil, lemon juice, minced garlic, salt, pepper, oregano, smoked paprika, and red pepper flakes. Add the shrimp and toss to coat.

2. Let it Rest: Cover the bowl and refrigerate for 30 minutes to allow the shrimp to absorb the flavors.

3. Skewer the Shrimp: Thread the marinated shrimp onto the soaked skewers.

4. Grill: Heat an outdoor grill or a grill pan over medium-high heat and grill the skewers for 1 minute per side, until the shrimp are pink and just cooked through.

Grilled Shrimp Skewers

These grilled shrimp skewers are juicy, flavorful, and perfect for a quick and easy meal. Marinated in garlic, lemon, and spices, they're great for warm days and cook in just minutes.

Ingredients 

  • 500 g Large Shrimp - Peeled and Deveined

For the Marinade: 

  • 3 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon Lemon Juice
  • 3 Cloves Garlic
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Oregano
  • 1 teaspoon Smoked Paprika
  • ¼ teaspoon Red Pepper Flakes
  • Parsley - Chopped

Instructions

  • Place the shrimp in a large bowl.
  • Add extra virgin olive oil, lemon juice, minced garlic, salt, pepper, oregano, smoked paprika, and red pepper flakes.
  • Toss the shrimp well to coat, then cover and marinate in the fridge for 30 minutes.
  • Thread the marinated shrimp onto skewers.
  • Heat a grill or grill pan over medium-high heat.
  • Grill the shrimp skewers for 1-1.5 minutes per side until pink and just cooked through.
  • Transfer to a plate and sprinkle with chopped parsley before serving.

Notes

Soak the Skewers: I always soak wooden skewers for at least 30 minutes; this keeps them from burning on the grill.
Let the Shrimp Rest in Marinade: 30 minutes in the marinade is just right to pack in flavor without turning the shrimp rubbery.
Grill Quickly Over High Heat: I cook the shrimp for just about 1 to 1.5 minutes per side. Any longer and they lose that perfect tenderness.
Have Everything Ready: Shrimp cook fast, so I make sure my sides and garnishes are ready before they hit the grill.
Garnish Just Before Serving: A little chopped parsley on top adds a fresh, bright finish. I always add it last.
