Crispy Shrimp Pancakes - Easy, Flavorful, and Ready in Minutes 

I first started making shrimp pancake when I wanted a snack that felt a little different from the usual fritters or croquettes. Shrimp was the answer. The batter comes together in minutes, and the sound of it sizzling in the pan makes me think of lively street markets where food is made fresh, right in front of you. 

When I set a plate of this crispy shrimp pancake out, it disappears faster than I expect. The crisp edges, soft center, and that quick dipping sauce all make it a favorite in my kitchen. I like it best when I serve it right away, still hot, with the steam rising and the sauce on the side ready for dipping.

  • Coriander & Ginger: I love the freshness coriander brings, while ginger adds a warm kick that lifts the whole pancake. 
  • Cornstarch & Eggs: This simple mix keeps the batter light and crisp without feeling heavy. 
  • Vinegar, Soy Sauce & Chili Flakes: These come together for a dipping sauce that's tangy, salty, and a little spicy, just the way I like it.

1. Prep the Vegetables: Finely chop the red onion, green chili, carrot, and coriander.

2. Make the Shrimp Batter: Mix vegetables with spices, ginger, shrimp, cornstarch, and eggs to form a thick batter.

3. Cook the Shrimp Pancakes: Cook a spoonful of the mixture in extra virgin olive oil, flattening slightly, until golden on both sides.

4. Prepare the Dipping Sauce & Serve: Whisk vinegar, soy sauce, and chili flakes for dipping, then serve with hot shrimp pancakes.

💭My Tips for Recipe Success

Prep Everything First: I like to have the sauce whisked and ready before frying, so I can serve the pancake straight from the pan. 

Keep It Crisp: I find that placing the cooked pancake on a paper towel-lined plate helps keep its edges crunchy.

Ingredients 

  • ½ Red Onion - Finely chopped
  • 1 Green Chilli - Finely chopped
  • ½ Carrot - Finely chopped
  • Bunch of Coriander - Finely chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper - Freshly ground
  • 1½ teaspoon Paprika
  • 1 teaspoon Ginger - Minced
  • 300 g Shrimps
  • 70 g Cornstarch
  • 2 Eggs
  • 1 tablespoon Extra Virgin Olive Oil

For the Sauce: 

  • 1 tablespoon White Vinegar
  • 1 tablespoon Soy Sauce
  • ½ teaspoon Sweet Chili Flakes

Instructions

  • In a large mixing bowl, combine the chopped red onion, green chilli, carrot, coriander, salt, black pepper, paprika, and minced ginger. Stir well to coat the vegetables in the seasoning. Add the shrimp, followed by the cornstarch and eggs, and mix until everything comes together into a thick, cohesive batter. 
  • In a non-stick pan, heat 1 tablespoon of extra virgin olive oil over medium heat. Add spoonfuls of the shrimp mixture to the pan and gently press each one to flatten. Cook for 2-3 minutes per side, or until golden and fully cooked. Transfer the pancakes to a plate lined with paper towels to absorb any excess oil. 
  • In a small bowl, whisk together the white vinegar, soy sauce, and sweet chili flakes to make the dipping sauce.
  • Serve the shrimp pancakes hot with the sauce on the side.

Notes

Use Whole Small Shrimp: I like leaving the small shrimp as they are, so every bite has a nice pop of flavor.
Cook in Small Batches: I always fry only a few at a time so they turn out evenly golden and stay crisp.
Make the Sauce Ahead: I like to whisk the dipping sauce earlier and keep it chilled until serving.
Enjoy While Hot: I find these pancakes taste their very best straight from the pan, warm and crunchy.
