These oven roasted chestnuts have a tender center and a naturally sweet, nutty flavor. A hot-water soak before roasting and a kitchen-towel wrap afterward help make peeling easier, so you can enjoy them warm with just one main ingredient.

Why You'll Love These Oven Roasted Chestnuts
- No special roasting equipment: A regular oven and baking sheet are all you need to cook the chestnuts at home.
- Simple ingredients: There's no added oil, butter, or seasoning, so the chestnuts' naturally sweet, nutty flavor comes through.
- Easier peeling: Scoring and soaking the chestnuts before roasting, then wrapping them in a towel afterward, helps loosen the shells for peeling.
When chestnuts start appearing at the markets, and the weather turns chilly, I always think of the street vendors selling them freshly roasted. That familiar smell brings back such a sense of nostalgia, and I find myself craving the warmth and taste of roasted chestnuts again.
I can't recreate that open-fire roasting at home, but this oven method gives me an easy, convenient way to satisfy the craving. There's something comforting about bringing those seasonal aromas into the kitchen, whether it's a tray of chestnuts roasting or an apple crisp baking. With these chestnuts, the extra preparation is all about making them easier to peel so I can enjoy them while they're still warm.

Key Ingredients in Oven Roasted Chestnuts
You'll find the exact measurements in the recipe card, but here's a closer look at key ingredients and why I use them.
- Fresh chestnuts: Use raw chestnuts still in their shells. Choose firm, plump chestnuts with smooth shells and no visible mold. Similar-sized chestnuts will cook more evenly; packaged cooked chestnuts are not suitable for this preparation.
- Hot water: Used for the soak before roasting, then drained away. It is part of the preparation, rather than a liquid added to the baking sheet.
How to Make Oven Roasted Chestnuts
You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

1. Score and soak: Carefully make a long slit across the rounded shell of every chestnut using kitchen scissors. Put the chestnuts in a heatproof bowl, cover with hot water, and leave them to soak.
2. Dry and arrange: Drain the chestnuts and pat them dry with paper towels. Spread them in a single layer on a parchment-lined baking sheet, with the cuts facing upward.
3. Roast: Cook in the preheated oven until the shells have opened along the cuts and the centers are tender. The video shows how the shells pull apart to expose the chestnuts inside.
4. Wrap and peel: Transfer the chestnuts to a clean kitchen towel, gather the towel around them, and gently squeeze to loosen the shells. Peel away the shells and thin inner skins while the chestnuts are still warm but comfortable to handle.

Tips for Easier Peeling
- Score every chestnut: The cut provides an opening for steam to escape during cooking. Take your time and keep your fingers clear of the scissors.
- Check the center, too: An open shell is a useful visual cue, but check that the chestnut inside is tender before removing the batch from the oven.
- Squeeze gently: Use the towel to help loosen the shells without crushing the chestnuts inside.
- Peel while warm: Remove both layers: the hard outer shell and the thin skin underneath. Keep the remaining chestnuts wrapped as you work through the batch.
Storage
Peel any leftover chestnuts while they are still warm. Once cooled, place them in an airtight container and refrigerate for up to 4 days. For longer storage, freeze the peeled chestnuts for up to 3 months and thaw in the refrigerator before using.
What to Serve With Roasted Chestnuts
Serve the chestnuts warm in a bowl for a simple snack. For a sweet pairing, enjoy them with a cup of Spanish hot chocolate.
Peeled chestnuts can also be chopped into stuffing or scattered over a bowl of butternut squash soup. Keep them plain when you want to use them in another recipe.
