The smell of garlic and smoke from grilled chicken was what first caught my attention, it's what made me fall for the simplicity of Italian grilled chicken thighs. Every time I make them, that same aroma fills the air, rich and inviting. There's nothing fancy about this dish, just Italian marinated chicken thighs sizzling on the grill, full of bold, rustic flavor.

I usually whisk the marinade in the morning and let the boneless skinless chicken thighs soak all day, so by dinner time they're bursting with flavor. Whether I cook them outside on the grill or indoors on a grill pan or electric grill, they always stay juicy and never dry out. And if there happens to be any chicken left (which is rare), I'll slice it into sandwiches or toss it into salads the next day.

Ingredients 

  • 500 g Boneless Skinless Chicken Thighs

For the Marinade:

  • 50 ml Lemon Juice
  • 50 ml Extra Virgin Olive Oil
  • 2 Cloves Garlic
  • 1 tablespoon Paprika
  • 1 teaspoon Oregano
  • ½ teaspoon Rosemary
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions

  • In a large bowl, whisk together lemon juice, extra virgin olive oil, garlic, paprika, oregano, rosemary, salt, and black pepper.
  • Place the chicken thighs into the bowl and mix well to coat them in the marinade.

  • Preheat the electric indoor grill.

Grill on an Outdoor Grill or Grill Pan: I like to leave each side undisturbed for 4–5 minutes to build that beautiful char and deep flavor.
Rest Before Serving: Letting the chicken rest for a few minutes keeps all the juices inside where they belong.
