Garlic Butter Chicken Thighs Recipe, juicy, tender chicken simmered in a rich garlic butter sauce that's full of flavor and so easy to make at home in just 30 minutes.

Recipe
Garlic Butter Chicken Thighs

This garlic butter chicken thighs recipe came together on a weeknight when I wanted something simple yet satisfying. With a few basics, chicken thighs, garlic, butter, and a splash of white wine, it turned into one of those dishes that feels far more special than the effort it takes.

The chicken turns tender and juicy as it simmers in the garlic butter sauce, soaking up every bit of that rich, savory flavor. I like to finish with fresh parsley for color and a clean contrast to the buttery sauce. This one-pan chicken thigh recipe is all about comfort and convenience, minimal prep, easy cleanup, and flavor that truly delivers.

⭐Why You'll Love My Recipe

  • Quick & Easy: It's done in under 30 minutes, but it feels like a restaurant dish.
  • One Pan: You don't need anything fancy, just one skillet and a few good ingredients.

🧾Ingredients

You'll find the exact measurements in the recipe card, but here's a closer look at a few of the ingredients and why I use them.

  • Chicken & Seasoning: I always use boneless skinless chicken thighs because they stay juicy and tender. A simple sprinkle of salt and black pepper brings out their natural flavor before cooking.
  • Aromatics & Garlic: I start with shallot and plenty of garlic cloves. The shallot adds sweetness, while the garlic softens in butter, creating that signature depth that makes this dish so irresistible.
  • Butter, Flour & Wine: I cook everything in salted butter, adding a light dusting of flour for a smooth, flavorful sauce. A splash of dry white wine lifts the browned bits from the pan and brightens the rich garlic butter sauce.
  • Herbs & Heat: A pinch of dried oregano, chili flakes, and cayenne gives the sauce warmth and balance. I finish with fresh parsley for color and freshness, it's the final touch that ties everything together beautifully.

👩🏻‍🍳How to Make Garlic Butter Chicken Thighs

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

Process 1-4

1. Season the chicken thighs with salt and pepper, coat them in flour, and shake off the excess. Cook them in a pan with melted butter for 4-5 minutes per side until golden and cooked through. Remove and set aside.

2. In the same skillet, sauté the shallot and garlic until fragrant, then deglaze the pan with white wine, simmering for a few minutes to lift any browned bits.

3. Stir in the remaining salt, chili flakes, cayenne pepper, and oregano. Reduce the heat and slowly whisk in the butter until the sauce is smooth and thickened.

4. Stir in the chopped parsley, then return the chicken thighs to the skillet, coating them in the sauce. Simmer for a few minutes to heat through before serving.

🍽 What to Serve On The Side?

When I make Garlic Butter Chicken Thighs, I love serving it with ciabatta bread to dip in the sauce. Potato wedges or Greek lemon potatoes also goes well with this garlic butter chicken thighs.

💭My Tips for Recipe Success

Bring the Chicken to Room Temperature: I like to take the chicken out about 15-20 minutes before cooking. It helps it cook evenly and develop a nice sear in the pan.

Add Butter Gently: When I start adding the butter, I lower the heat so the sauce stays silky and smooth. It makes such a difference in how everything comes together.

Storage: I always let the chicken cool completely before storing it in an airtight container. It keeps well for up to two days, and when I reheat it, I do it slowly on the stovetop so the garlic butter sauce stays rich and creamy.

Instructions

  • Season the chicken thighs with salt and black pepper.
  • Coat the chicken evenly with flour, shaking off any excess.
  • In a large skillet, melt 60 g of salted butter over medium-high heat.
  • Add the chicken thighs and sear for 4-5 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.
  • Add the finely chopped shallot and minced garlic to the same skillet and sauté for 1-2 minutes until fragrant.
  • Pour in the dry white wine and simmer for 2-3 minutes, scraping up any browned bits from the pan.
  • Stir in the remaining salt, chili flakes, cayenne pepper, and dried oregano.
  • Reduce the heat to low and gradually whisk in the remaining cubed butter until the sauce is smooth and slightly thickened.
  • Add the chopped parsley and stir to combine.
  • Return the chicken to the skillet and turn to coat in the sauce. Simmer for 2-3 minutes to heat through.
  • Serve hot, garnished with extra parsley if desired.

Notes

Brown the Chicken First: I always make sure the chicken gets a nice golden sear; it adds so much flavor before the sauce even goes in.
Let the Wine Simmer: I like to give the wine a couple of minutes to bubble away; it picks up all the flavor from the pan and makes the sauce taste richer.
Add the Butter Slowly: I whisk in the butter a few cubes at a time so the sauce turns silky smooth without breaking.
