These air fryer potato wedges are crispy on the outside, soft inside, and seasoned with a simple homemade spice mix. They cook in 15 minutes, making them an easy side dish or snack.
Cut the potatoes into wedges, keeping them similar in size for even cooking.
In a large bowl, toss the potato wedges with extra virgin olive oil until evenly coated. Sprinkle over the salt, white pepper, paprika, onion powder, and garlic powder, then toss again until every wedge is well seasoned.
Place the wedges in the air fryer tray in a single layer without overcrowding. Air fry at 390°F (200°C) for 10–15 minutes until golden brown and crispy.
Transfer to a serving plate and serve immediately.
