Ever since I made my first batch, these air fryer potato wedges have become a regular in my kitchen. They're cozy, quick, and come together with hardly any cleanup, no peeling, no parboiling, and definitely no deep frying. Just golden wedges with crispy edges and soft, creamy insides that taste like comfort in every bite. It's easily the best air fryer potato wedges recipe I've found, and it's simple enough to make any night of the week.

I use whatever potatoes I have, Yukon golds, red, or russet, and they always turn out beautifully. These air fryer seasoned potato wedges are the kind of easy air fryer side dish that fits anywhere: next to grilled meats, served with cane's sauce at parties, or even cold from the fridge the next day (still delicious, trust me).

  • Spice Blend: Paprika is one of my favorites here, it adds color and a gentle smokiness that pairs perfectly with roasted potatoes.
  • White Pepper: I prefer white pepper over black for its smooth heat. It gives warmth without overpowering the other flavors, just the right touch of spice.

1. Prep the Potatoes: Cut the potatoes into evenly sized wedges.

2. Season: In a large bowl, toss the wedges with extra virgin olive oil, salt, white pepper, paprika, onion powder, and garlic powder until well coated.

3. Air Fry: Preheat the air fryer to 392°F (200°C). Place the wedges in a single layer and cook for 10-15 minutes until golden and crispy.

4. Serve: Let them cool slightly, then serve hot with your favorite dipping sauce or enjoy as is.

📖Seasoning Variations

  • Spicy Wedges: Sometimes I add a pinch of cayenne pepper or chili flakes when I want a little heat. It's just enough to wake up the flavor without being too spicy. 
  • Cheesy Finish: After air frying, I'll occasionally sprinkle grated Parmesan on top while they're still hot. It melts slightly and gives a salty, savory layer. 
  • Smoky Twist: If I'm craving something deeper, I swap regular paprika for smoked paprika. It gives the wedges a richer, almost BBQ-like flavor. 
  • Fresh Herb Toss: Just before serving, I like to add chopped parsley or thyme for a fresh, bright finish; it's especially good if I'm serving them with grilled chicken. 
  • Lemon Pepper Style: I've tried replacing paprika with lemon pepper seasoning, and it turned out so zesty and refreshing. Great with garlic mayo!

💭My Tips for Recipe Success

Scrub, Don't Peel: I always leave the skin on, less prep, more texture, and it crisps up beautifully. 

Season after Oil: That's my little trick to make sure every wedge gets evenly coated with flavor. 

Reheat Leftovers in the Air Fryer: If I have any left (rarely!), I pop them back in for 3-4 minutes. They crisp right back up, almost better than the first time.

  • 3 Russet Potatoes
  • 1 tablespoon Extra Virgin Olive Oil
  • ½ teaspoon Salt
  • ½ teaspoon White Pepper Powder
  • ½ teaspoon Paprika Powder

  • 1 teaspoon Garlic Powder

Instructions

  • Preheat the air fryer to 392°F (200°C).
  • Cut each potatoes into wedges, keeping them similar in size for even cooking.
  • In a large bowl, toss the potato wedges with extra virgin olive oil until evenly coated. Sprinkle over the salt, white pepper, paprika, onion powder, and garlic powder, then toss again until every wedge is well seasoned.
  • Place the wedges in the air fryer tray in a single layer without overcrowding. Air fry at 392°F (200°C) for 10-15 minutes until golden brown and crispy.

Notes

Cut Even Wedges: I like to slice the potatoes evenly so they cook properly and crisp up the same.
Space Them Out: I always spread the wedges out in one layer so they don’t steam.
Watch the Time: I check them at 10 minutes, then cook a bit more if they need more color.
Best Served Fresh: They’re at their crispiest when eaten hot right after air frying.
