The Secret to Crispy Wedges Without Deep Frying 

There was a small place near where I lived for a while that served thick-cut potato wedges in paper trays, always hot and perfectly crisp. They weren't overloaded with seasoning, just simple and well-cooked. That's what I try to recreate at home, something straightforward that still feels satisfying, especially when served with a dip like pepper mayonnaise or ranch dressing. 

Now I make them in the air fryer because it's quick and consistent. They're cozy, quick, and come together with hardly any cleanup, no peeling, no soaking, no parboiling, and definitely no deep frying. I also love making them as an easy side for dishes like cast-iron chicken breast or a chicken sandwich, because they fit so naturally into that kind of simple meal.

My Tips for Crispy Potato Wedges

Choose the Right Potato: I prefer using Russet potatoes because they have a higher starch content, which helps create that crisp exterior while keeping the inside soft. Waxy potatoes tend to stay firmer and don't crisp the same way. 

Adjust Time Based on Thickness: If you cut thicker wedges, they'll need a couple more minutes to cook through. Thinner wedges cook faster, so I keep an eye on them near the end to avoid overcooking. 

Use the Last Minutes for Extra Color: If the wedges are cooked through but not as golden as I like, I leave them in for an extra 2-3 minutes. That final bit of time helps develop better color and texture. 

Storage

When storing leftovers, I let the wedges cool completely before placing them in a container. This prevents condensation, which can make them soggy.

  • 3 Russet potatoes - cut into wedges
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon white pepper powder
  • ½ teaspoon paprika powder

Instructions

  • Preheat the air fryer to 392°F (200°C).
  • Cut the potatoes into wedges, keeping them similar in size for even cooking.
  • In a large bowl, toss the potato wedges with extra virgin olive oil until evenly coated. Sprinkle over the salt, white pepper, paprika, onion powder, and garlic powder, then toss again until every wedge is well seasoned.
  • Place the wedges in the air fryer tray in a single layer without overcrowding. Air fry at 390°F (200°C) for 10-15 minutes until golden brown and crispy.

Notes

Cut Evenly: I like to cut the wedges the same size so they cook evenly and crisp at the same time.  
Single Layer Matters: I always leave space between the wedges so they crisp instead of steaming.
