Black pepper mayonnaise is a quick, three-ingredient pepper mayo recipe made with creamy mayonnaise, freshly ground black pepper, and Worcestershire sauce. Inspired by KFC pepper mayo, this no-cook sauce is ready in two minutes and works as a dip or spread.

One afternoon, I found myself craving the familiar pepper mayonnaise served with KFC-style chicken wraps, but I was nowhere near a KFC. Rather than forgetting about it, I went into the kitchen and tried recreating that peppery sauce with ingredients I already had. Discovering that mayonnaise, black pepper, and Worcestershire sauce were enough made it feel like a practical recipe rather than a complicated copycat. I still like making it when I need a quick sauce for oven-baked chicken tenders or a bowl of crispy mashed potato fries.

When developing this recipe, I wanted the pepper flavor to be noticeable without losing the smooth texture of the mayonnaise. Freshly ground pepper adds warmth and visible black specks, while Worcestershire sauce provides the savory tang that stops the mayonnaise from tasting flat or overly rich. Stirring thoroughly spreads both seasonings through the mayonnaise, so the sauce can be served immediately. As with my Cane's sauce, a small amount of concentrated seasoning gives a simple mayonnaise base much more depth without requiring any cooking.

Pepper mayo is a creamy, no-cook sauce made by combining mayonnaise with black pepper and Worcestershire sauce. It is commonly served as a dip for fries and chicken or used as a spread for burgers, sandwiches, and wraps.

  • Mayonnaise: I prefer a creamy, full-fat store-bought mayonnaise because it creates a smooth base and balances the stronger seasonings. Homemade mayonnaise can also be used.  
  • Black Pepper: Freshly grinding whole black peppercorns gives this peppercorn mayo a more noticeable pepper flavor and attractive black specks. I avoid finely powdered pepper because it does not provide the same texture.  
  • Worcestershire Sauce: This adds savory, tangy flavor and prevents the mayonnaise from tasting flat. Only a small amount is needed because its flavor is concentrated. 
  • The Three-Ingredient Balance: Keeping mayonnaise as the main ingredient allows the pepper to remain noticeable without letting the Worcestershire sauce overpower it.

How to Make Black Pepper Mayonnaise

1. Start with the Mayonnaise: Place the mayonnaise in a mixing bowl.

2. Add the Black Pepper: Add freshly ground black pepper to the mayonnaise.

3. Mix in the Worcestershire Sauce: Add Worcestershire sauce.

4. Stir, Taste, and Serve: Mix thoroughly until the pepper is evenly distributed. Taste, adjust the pepper if needed, and serve immediately.

My Tips for Pepper Mayonnaise

Taste It With the Food: I prefer tasting the pepper mayo with a fry or piece of chicken rather than by itself. This makes it easier to judge how the seasoning works with the food it will accompany.

Wait Before Adding Salt: Mayonnaise and Worcestershire sauce already contain salt, so taste the finished sauce before adding any extra seasoning.

Rest It for a Stronger Pepper Flavor: The sauce can be served immediately, but when I have time, I cover and refrigerate it for 30 minutes. This allows the pepper flavor to spread more evenly through the mayonnaise. Stir again before serving.

Keep the Ratio When Scaling: When doubling the recipe, keep the same ratio of mayonnaise, black pepper, and Worcestershire sauce. Taste it after mixing before making any further adjustments.

Storage

Store black pepper mayonnaise in an airtight container in the refrigerator for up to one week. Stir it thoroughly before serving because the sauce may separate slightly as it sits. Do not leave mayonnaise-based sauce at room temperature for an extended period.

What to Serve With Pepper Mayo

Black pepper mayonnaise is especially good with crispy mashed potato fries, oven-baked chicken tenders, air fryer potato wedges, or chicken croquettes. 

It also works well as a KFC Twister-style sauce for chicken wraps filled with lettuce and tomatoes. You can spread it over burgers and sandwiches or serve it as a dip for fresh vegetables.

Ingredients 
 

  • 115 g mayonnaise
  • 1½ teaspoon freshly ground black pepper
  • 1 teaspoon Worcestershire sauce

Instructions

  • Add 115 g mayonnaise, 1½ tsp freshly ground black pepper, and 1 tsp Worcestershire sauce to a small bowl. Stir thoroughly until the black pepper and Worcestershire sauce are evenly distributed.

Notes

Choose a Creamy Mayonnaise: I prefer full-fat mayonnaise because its rich, smooth texture balances the strong black pepper flavor.
Use a Medium-Fine Grind: Grind whole black peppercorns shortly before making the sauce. A medium-fine grind provides visible pepper specks without leaving large, hard pieces.
Measure the Worcestershire Sauce Carefully: Its flavor is concentrated, so one teaspoon adds savory tang without overpowering the mayonnaise and black pepper.
