I started making my own after one too many forgotten grocery runs, and now I honestly prefer it. It's tangy, a little sweet, and the spices give it that rich, layered flavor that works in everything from burgers to stir-fries. Most store-bought versions include anchovies or preservatives, but this one keeps things simple and vegetarian-friendly. 

This homemade Worcestershire sauce only takes a few minutes on the stove, and the flavor actually improves after a night in the fridge. I always keep a small jar ready to go.

  • Brown Sugar & Warm Spices: I always reach for brown sugar, cinnamon, and pepper here. Together, they give a sweet warmth and gentle kick that rounds it all out. 
  • Onion, Garlic & Mustard Powders: These are my go-to pantry spices for extra depth; they help make the sauce feel balanced, not just vinegary.

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

Process 1-4

1. Pour apple cider vinegar into a small saucepan.

2. Add all the remaining ingredients to the saucepan.

3. Bring the mixture to a boil, then lower the heat and simmer for 2 minutes, stirring to dissolve the sugar and mix the spices.

4. Take the saucepan off the heat, skim off any foam, let it cool to room temperature, pour the sauce into a clean jar, seal it, and refrigerate.

💭Tips for Recipe Success

Use a Small Saucepan: A smaller pot makes it easier to manage the simmer and prevents over-reducing the liquid. 

Let It Sit Overnight: I always wait until the next day to use it; the flavor is noticeably richer and smoother. 

Label the Jar with a Date: Since it's homemade and doesn't contain preservatives, I write the date on the lid and use it within 2-3 weeks.

Ingredients 

  • 120 ml Apple Cider Vinegar
  • 2 tablespoon Light Soy Sauce
  • 2 tablespoon Water
  • 1 tablespoon Brown Sugar
  • ¼ teaspoon Ground Ginger
  • ¼ teaspoon Mustard Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Garlic Powder
  • ⅛ teaspoon Cinnamon Powder
  • ⅛ teaspoon Black Pepper

Instructions

  • In a small saucepan, combine all the ingredients.
  • Place the saucepan over medium heat and bring the mixture to a gentle simmer.
  • Simmer for 2 minutes, stirring occasionally, until the sugar is dissolved and spices are well blended.
  • Remove from heat and skim off any foam from the surface.
  • Let the mixture cool to room temperature.
  • Transfer to a sterilized glass jar or bottle, seal tightly, and refrigerate.

Notes

Stir as It Simmers: I like to keep stirring gently while it simmers; this helps the sugar dissolve fully and brings all the spices together.
Skim the Surface: If I see any foam rising, I always skim it off. It keeps the sauce looking clear and smooth.
Cool Before Bottling: I wait until it’s fully cooled so there’s no steam trapped in the bottle; that helps it stay fresh longer.
Use a Clean Jar: I make sure the jar is sterilized before pouring the sauce in. It’s a small step, but it makes a big difference in keeping it shelf-stable.
Let the Flavor Rest: I usually give it a day in the fridge before using; it tastes richer and more balanced after sitting overnight.
