Ingredients 

For Chicken:

  • 3 tablespoon Yogurt
  • 1 teaspoon Salt
  • 1 teaspoon Cumin Powder
  • ½ teaspoon Pepper
  • ½ teaspoon Paprika
  • 1 Chicken Breast
  • 1 tablespoon Extra Virgin Olive Oil

For Sandwich:

  • 2 Ciabatta Bread
  • 2 tablespoon Mustard
  • 2 Lettuce Leaves - Sliced
  • 2 Cheese Slices
  • 1 Tomato - Sliced
  • Mayonnaise
  • Red Pickled Onions

Instructions

  • In a bowl, combine the yogurt, salt, cumin powder, pepper, and paprika.
  • Butterfly the chicken breast, then cut it into two fillets.
  • Coat the chicken fillets with the yogurt spice mixture until fully covered.
  • Marinate the chicken for at least 30 minutes.
  • Heat the extra virgin olive oil in a pan or grill pan over medium-high heat.
  • Cook the marinated chicken until fully cooked and slightly charred on the edges.
  • Slice the ciabatta rolls in half.
  • In the same pan, toast the ciabatta rolls until lightly golden.
  • Spread mustard on one side of each toasted roll.
  • Slice the lettuce leaf and place it on the bottom half of each roll.
  • Layer the cooked chicken fillets on top of the lettuce.
  • Add a slice of cheese over the chicken.
  • Slice the tomato and arrange the slices over the cheese.
  • Add a generous amount of pickled onions on top.
  • Spread mayonnaise on the other half of the ciabatta roll, then place it on top to complete the sandwich.

Notes

Marinate Overnight for the Best Flavor: I like to leave the chicken in the yogurt mixture overnight so the spices really sink in and the meat gets extra tender.  
Let the Chicken Rest: I always rest it for a couple of minutes after cooking so the juices stay inside when slicing.  
Toast the Bread in the Same Pan: I love how it picks up the flavorful bits left from cooking the chicken.  
Use Fresh Pickled Onions: I find they keep their crunch and give the perfect tang when made the same day.  
Slice the Tomato Just Before Assembling: This way, it stays juicy without soaking the bread too soon.
