  • Lime Juice & Apple Cider Vinegar: I use lime juice to keep the sauce fresh and lively, and apple cider vinegar gives it that tangy hot sauce finish without overpowering the mango. 
  • Paprika, Turmeric & Salt: Paprika adds gentle depth, turmeric gives the sauce a warm golden color, and salt helps bring all the sweet, spicy, and tangy flavors together. 
  • Vegetable Oil: I use a little vegetable oil when simmering the sauce because it helps the texture turn smoother and gives the mango mixture a glossy finish.

How to Make Mango Habanero Sauce

1. Blend the Base: In a blender, blend mango pieces, habanero peppers, ginger, and lime juice.

2. Heat the Oil: Heat the vegetable oil in a pan over medium heat.

3. Cook the Sauce: Add the blended mango to the saucepan, add salt, paprika, turmeric, and apple cider vinegar. Stir and let it simmer for 10 minutes, stirring occasionally, until it thickens.

4. Cool and Store: Take the saucepan off the heat, put the mango habanero sauce in a bowl, and let it cool completely before moving it to a clean jar or container.

Let the Sauce Cool Before Blending Again: If you want an even smoother texture, I find blending the sauce once more after cooling helps create a silkier hot sauce consistency. 

Use It While Warm for Glazing: The sauce coats grilled chicken, wings, or shrimp more easily while still slightly warm because the texture stays looser and glossy. 

Use as Marinade: This sauce works beautifully as a marinade. I usually coat my proteins and let them sit for at least 30 minutes before cooking to soak in the flavor.

Store the sauce in an airtight jar or container in the fridge for up to 1 week. I find the flavor tastes even better after a few hours because the sweetness, acidity, and heat settle together more fully. Stir before serving if the sauce separates slightly.

Ingredients 

  • 2 ripe mangoes - peeled and chopped
  • 2 habanero peppers
  • 1 cm piece fresh ginger - peeled
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • ½  teaspoon salt
  • ½  teaspoon paprika
  • ¼  teaspoon ground turmeric
  • 1 tablespoon apple cider vinegar

Instructions

  • Peel and chop the 2 ripe mangoes, then place them in a blender or hand blender container. Add the 2 habanero peppers, ½-inch (1 cm) piece fresh ginger, and 1 tablespoon lime juice. Blend until completely smooth.  
  • Heat 1 tablespoon (15 ml) vegetable oil in a saucepan over medium heat.  
  • Pour the mango mixture into the saucepan, then stir in ½ teaspoon salt, ½ teaspoon paprika, ¼ teaspoon ground turmeric, and 1 tablespoon (15 ml) apple cider vinegar. Simmer the mango habanero hot sauce for 10 minutes, stirring occasionally, until slightly thickened.  
  • Remove the sauce from the heat and let it cool completely before transferring it to a sterilized jar or airtight container. 

Notes

Adjust the Heat: Before blending, I usually remove some of the habanero seeds because it gives better control over the spice without losing the fruity pepper flavor. 
Use Ripe Mangoes: Ripe mangoes make the sauce sweeter and smoother, and I like how they naturally thicken the sauce as it simmers. 
Blend It Well: Let the blender run until the sauce looks completely smooth; I find this gives it a glossy hot sauce texture without small mango or pepper pieces. 
Let It Rest: After chilling, I think the flavor tastes better because the mango, lime, vinegar, and habanero settle together nicely.
