Apple Hand Pies with Puff Pastry bake up golden and crisp, with a cozy cinnamon-apple filling. They’re such an easy treat for fall days, whether you want a snack or a simple dessert.
In a medium saucepan, melt the butter over medium heat. Add diced apples, brown sugar, cinnamon, and lemon juice. Cook until softened, about 5–6 minutes.
Stir the cornstarch with water in a small bowl. Pour into the apple mixture and cook for 1 minute, until thickened. Remove from the heat and let cool.
Roll out the puff pastry and cut into even rectangles.
Spoon a little apple filling into the center of each rectangle.
Brush the edges with egg wash before sealing.
Place the pastry over the filling to form a hand pie, then press the edges with a fork to seal.
Brush each hand pie with egg wash over the tops.
Mix the sugar and cinnamon in a small bowl. Sprinkle evenly over the pies.
Arrange the pies on a lined baking sheet and cut 3 small slits on the top of each.
Bake at 392°F (200°C) for 12–15 minutes, until golden brown and puffed.
Cool slightly before serving.
