This Chipotle Honey Chicken is smoky, sweet, and just the right amount of spicy. It’s a quick and flavorful recipe that always hits the spot for weeknight dinners or summer grilling.
In a large bowl, whisk together the chipotle paste or chipotle in adobo, honey, minced garlic, lime juice, smoked paprika, cumin, oregano, salt, pepper, and 1 tablespoon extra virgin olive oil until well combined.
Add the chicken thighs and mix until fully coated in the marinade. Cover and refrigerate for at least 1 hour, or overnight for a deeper flavor.
Preheat a grill or skillet over medium heat and add the remaining 1 tablespoon extra virgin olive oil.
Remove the chicken from the marinade and cook for 3–4 minutes per side, or until fully cooked and slightly charred.
