This chipotle honey chicken combines juicy boneless chicken thighs with smoky chipotle, sweet honey, and fresh lime juice. The chicken marinates until flavourful, then cooks in one pan until tender with caramelised edges.

On evenings when I want chicken with plenty of flavour but do not want to make a complicated sauce, this chipotle honey chicken is an easy choice. I prefer chipotle for its smokiness rather than strong heat, so the honey and lime are important here. The honey gently balances the spice, while the lime keeps the marinade from tasting overly sweet. My honey garlic chicken thighs are a softer, sweeter option, while these chipotle chicken thighs have a more savoury flavour without the honey. 

When developing this recipe, I wanted the chicken to have dark, caramelised edges while remaining juicy in the centre. Boneless skinless thighs work especially well because they can handle the heat of the skillet without drying out, which is also why I use them in my air fryer boneless skinless chicken thighs. The chipotle adds smoky depth, the honey forms a lightly sticky coating, and the lime gives every bite a fresh finish. Cooking the chicken in a hot skillet also concentrates the marinade around the edges, giving you more flavour without needing to prepare a separate sauce.

Key Ingredients in Chipotle Honey Chicken

These ingredients work together to create the sweet, smoky and lightly spicy flavour that makes this chicken so satisfying.

  • Boneless Skinless Chicken Thighs: I prefer using chicken thighs here because they stay juicy while the outside becomes caramelised in the skillet. Pieces of a similar size will also cook more evenly. 
  • Chipotle Paste: This is what gives the chicken its deep smoky flavour and gentle heat. Some brands are stronger than others, so I usually taste the paste first and adjust the amount if needed. 
  • Honey and Fresh Lime Juice: Honey softens the heat from the chipotle and helps create those darker, sticky edges. Fresh lime juice keeps the marinade balanced and stops it from tasting too sweet. 
  • Garlic, Smoked Paprika, Cumin and Oregano: These seasonings add warmth and savoury depth to the marinade. I especially like the smoked paprika here because it makes the chipotle flavour feel even richer.

How to Make Chipotle Honey Chicken

Follow these simple steps to prepare the chicken in one skillet. You can find the complete printable recipe with measurements below.

1. Make the Marinade: In a large bowl, whisk together chipotle paste, honey, minced garlic, lime juice, smoked paprika, cumin, oregano, salt, pepper, and 1 tablespoon of extra virgin olive oil.

2. Marinate the Chicken: Add the chicken thighs to the bowl and toss until fully coated. Cover and refrigerate for at least 1 hour, or overnight for a deeper flavor.

3. Heat the Pan or Grill: Set a skillet or grill over medium heat and add the remaining 1 tablespoon of extra virgin olive oil.

4. Cook and Rest: Remove the chicken from the marinade and cook for 3-4 minutes per side, until charred and cooked through. Let it rest for a few minutes before slicing or serving.

Helpful Swaps

  • Chipotles in Adobo: Finely chop chipotle peppers in adobo when chipotle paste is unavailable. Include a little adobo sauce for additional smoky flavour. 
  • Chicken Breasts: Boneless chicken breasts can be used, but slice or pound them to an even thickness. Their cooking time will vary, so use an instant-read thermometer and remove them once they reach 165°F/74°C. 
  • Lemon Juice: Fresh lemon juice works when you do not have lime, although lime gives the marinade a flavour that pairs more naturally with chipotle. 

Tips for Chipotle Honey Chicken

Choose Similar-Sized Thighs: Chicken thighs vary considerably in size. I try to select evenly sized pieces so I am not removing some from the skillet while waiting for thicker ones to finish. 

Let the Excess Marinade Drip Away: Too much liquid in the skillet can stop the chicken from browning properly. A thin coating is enough to create flavour and caramelised edges. 

Wait Before Flipping: Once the chicken goes into the skillet, leave it alone until it releases easily from the surface. Moving it too soon can tear the outside and prevent an even sear. 

Check the Thickest Piece: I always test the largest thigh before taking everything out of the pan. If that piece has reached 165°F/74°C, the smaller pieces should also be ready.

Storage

I store leftover chipotle honey chicken in an airtight container in the refrigerator for up to three days. To keep the meat tender, reheat it gently in a covered skillet with a small splash of water, or warm it briefly in the microwave until heated through. 

What to Serve with Chipotle Honey Chicken

I like serving this chicken with rice and a fresh spoonful of cowboy caviar to add beans, corn, and plenty of freshness. For something crisp on the side, these air fryer potato wedges work well with the smoky honey-chipotle flavour. The sliced chicken is also easy to tuck into warm tortillas with lettuce, avocado, and a squeeze of lime.

Ingredients 
 

  • 1 kg boneless skinless chicken thighs
  • 2 tablespoon chipotle paste - or finely chopped chipotles in adobo
  • 80 g honey
  • 2 cloves garlic - minced
  • 3 tablespoon fresh lime juice
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoon extra virgin olive oil - divided

Instructions

  • In a large bowl, whisk together 2 tbsp chipotle paste, 80 g honey, 2 cloves garlic , minced, 3 tbsp fresh lime juice, 1 tbsp smoked paprika, 1 tsp ground cumin, 1 tsp dried oregano, ½ tsp salt, ¼ tsp freshly ground black pepper and 1 tbsp extra virgin olive oil. 
  • Add 1 kg boneless skinless chicken thighs and turn them until completely coated. Cover the bowl and refrigerate for at least 1 hour or up to overnight. 
  • Heat the remaining 1 tbsp extra virgin olive oil in a large skillet over medium heat. Remove the chicken from the marinade, allow the excess to drip back into the bowl, and discard the used marinade. 
  • Place the chicken thighs in the hot skillet without overcrowding the pan. Cook for 3-4 minutes on each side, adjusting the time according to their thickness, until caramelised and lightly charred. 
  • Check that the thickest part of each chicken thigh has reached an internal temperature of 165°F/74°C. Cook the chicken in batches when necessary.
  • Transfer the chicken to a clean plate and allow it to rest for 5 minutes before slicing or serving. 

Notes

Watch the Heat: Honey can catch quickly in a hot pan, so I prefer to keep the skillet over medium heat. If the chicken is browning too fast, lower the heat slightly and let it cook more gently. 
Make It as Spicy as You Like: Two tablespoons of chipotle paste give the chicken a good smoky kick. For a milder version, I use just 1 tablespoon, especially when I am serving it to someone who prefers less heat. 
Give the Marinade Time: One hour works well when I am short on time, but overnight is my favourite because the chicken absorbs much more of the smoky, sweet and tangy flavour. 
Do Not Crowd the Pan: I always leave a little space between the chicken thighs so they can caramelise properly. When the pan is too full, the chicken releases moisture and steams instead of developing those darker edges.
