Instructions
In a large bowl, place the eggs and beat with a whisk.
Add the sugar to the eggs and stir until well combined.
Add the desiccated coconut little by little while stirring until a uniform mixture is achieved.
Let the mixture rest for 30 minutes.
Take the mixture with a spoon and form small balls.
Place the small balls onto the prepared baking tray lined with baking parchment paper spacing them about 2.5 cm (1 inch) apart, and pinch the balls gently to form a point at the top,
Bake in a preheated oven at 180°C(356°F) for 10-15 minutes or until the edges of the macaroons are golden brown and slightly crispy.
Remove from the oven, place the macaroons on the rack and let cool completely.
Melt dark chocolate in the microwave at 30-second intervals.
Dip the bottoms of the cooled macaroons into the melted dark chocolate, letting the excess drip off.
Place the macaroons on a plate lined with baking parchment paper.
Decorate the top of the macaroons with the melted dark chocolate.
Refrigerate for 10 minutes and allow the chocolate to set.
