Instructions
Line a 9×5-inch or 8×4-inch loaf pan with parchment paper, letting the edges overhang for easy removal.
Blend the room-temperature cottage cheese in a blender until completely smooth.
Melt the dark chocolate in a microwave-safe bowl using 20–25 second intervals, stirring between each burst until smooth.
Stir the melted chocolate into the blended cottage cheese until fully combined. Pour the mixture into the lined pan and smooth the top.
Refrigerate for 2–3 hours or until firm, then slice into squares.
Notes
Blend Until Silky: I like to blend the cottage cheese a little longer to make sure the base turns out extra smooth.Microwave Melting: I stop melting the chocolate when a few pieces are still whole; residual heat finishes the job and keeps it from burning.Chill Time: I prefer chilling the fudge overnight because it slices cleaner and tastes richer.Serving: I let the fudge sit at room temperature for a few minutes before cutting; it makes slicing easier.
