This cottage cheese fudge is a simple no-bake chocolate recipe made with cottage cheese and dark chocolate. It comes together quickly and sets into a smooth, creamy treat.

Easy 2-Ingredient Cottage Cheese Fudge (High-Protein No-Bake Treat)

Sometimes I make this cottage cheese fudge when I'm craving something chocolatey but want a fast, lighter option. Once the cottage cheese is blended, it turns surprisingly smooth, giving this 2-ingredient fudge that creamy base without any extra work. It feels like a shortcut, but the texture still reminds me of classic fudge.

What I enjoy most is how easily it fits into the day. This no-bake cottage cheese fudge takes just a few minutes to mix, and then the fridge takes over. By the time I want a treat later, it's set into rich, chocolatey squares that taste like a simple, healthier homemade chocolate fudge.

Why You'll Love This Recipe

  • Easy No-Bake Fudge: This cottage cheese fudge comes together in minutes with just two ingredients, giving you a smooth, chocolatey treat without any cooking or complicated steps.
  • Lighter Chocolate Dessert: Blending cottage cheese creates a creamy base that feels rich but lighter than traditional fudge, making it a great option when you want a simple, healthier homemade chocolate bite.

Ingredients

Here's what you need to make this cottage cheese fudge recipe:

  • Cottage Cheese: I like using cottage cheese because it blends into a silky base and keeps the fudge creamy without adding extra ingredients.
  • Dark Chocolate Chips: I prefer 60% dark chocolate; they melt smoothly and bring a deep chocolate flavor that balances the creamy cottage cheese perfectly.
  • Optional Add-Ins: A pinch of sea salt or a splash of vanilla is nice when I want a little extra flavor.

How to Make Cottage Cheese Fudge

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

How to Make Cottage Cheese Fudge

1. Blend the Base: Blend the room-temperature cottage cheese in a blender until completely smooth.

3. Melt the Chocolate: Microwave the chocolate in 20-25 second intervals, stirring between each burst until fully melted.

4. Combine Everything: Stir the melted chocolate into the blended cottage cheese until smooth and evenly combined.

5. Chill the Fudge: Pour the mixture into a 9×5-inch or 8×4-inch loaf pan lined with parchment paper, smooth the top, and refrigerate for 2-3 hours until firm enough to slice.

My Tips for Recipe Success

Avoid Overheating the Chocolate: I stop microwaving when a few chocolate pieces remain whole; the residual heat melts them without scorching.

Choose the Right Pan Size: When I want thicker squares, I use an 8×4-inch loaf pan. A 9×5-inch pan makes slightly thinner fudge but sets just as well.

Storage: I keep the fudge sliced in an airtight container in the fridge for up to 5 days. It stays smooth, firm, and ready to enjoy anytime.

Ingredients

  • 175 g Cottage Cheese
  • 350 g Dark Chocolate Bars or Dark Chocolate Chips - 60% cocoa, chopped
Prevent your screen from going dark

Instructions

  • Line a 9×5-inch or 8×4-inch loaf pan with parchment paper, letting the edges overhang for easy removal.
  • Blend the room-temperature cottage cheese in a blender until completely smooth.
  • Melt the dark chocolate in a microwave-safe bowl using 20-25 second intervals, stirring between each burst until smooth.
  • Stir the melted chocolate into the blended cottage cheese until fully combined. Pour the mixture into the lined pan and smooth the top.
  • Refrigerate for 2-3 hours or until firm, then slice into squares.

Notes

Blend Until Silky: I like to blend the cottage cheese a little longer to make sure the base turns out extra smooth.
Microwave Melting: I stop melting the chocolate when a few pieces are still whole; residual heat finishes the job and keeps it from burning.
Chill Time: I prefer chilling the fudge overnight because it slices cleaner and tastes richer.
Serving: I let the fudge sit at room temperature for a few minutes before cutting; it makes slicing easier.

    5 stars
This 2 ingredient fudge is seriously the easiest little chocolate fix. The cottage cheese blends silky smooth, and once it chills it slices into the creamiest squares, keep it in the fridge and grab a piece whenever you want something sweet.
