Drain the boiled potatoes from the saucepan, transfer to a mixing bowl, and mash until smooth.
In a large skillet, heat extra virgin olive oil over medium heat. Add the finely chopped onion, season with salt and pepper, and cook until translucent, about 5-7 minutes.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Add the mashed potatoes to the skillet with the onion and garlic and cook for 2-3 minutes.
Make a space in the center of the skillet, add extra virgin olive oil, cumin powder, and paprika, and cook for about 30 seconds until fragrant.
Stir well to combine and cook for an additional 3-5 minutes to let the flavors meld together.
Add chopped fresh parsley, mix together, and cook for 1 minute.
Place a tortilla on a plate, spread sriracha sauce, add grated cheese, and potato mixture, sprinkle with grated cheese, and fold the tortillas over the filling. Repeat the step with the remaining tortillas.
In another pan, heat some extra virgin olive oil on medium heat. Add the tacos and cook one side until it's crispy and golden brown, about 2 minutes. Then flip them and do the same on the other side. Repeat this step with the rest of the tortillas.
Serve the tacos immediately while hot and enjoy!
