These date and walnut energy balls are naturally sweet no-bake bites made with soft dates and finely ground walnuts. They use just two main ingredients, come together quickly in a food processor, and are easy to keep on hand for a simple snack.

Instructions
Place 250 g pitted dates in a bowl and cover them with hot water. Let them soak for 10–15 minutes, then drain them very well.
Add 200 g walnuts to a food processor and process until they form fine crumbs. Transfer the ground walnuts to a large bowl.
Add the drained dates to the food processor and blend into a thick, sticky paste, scraping down the sides as needed. Add the date paste to the walnuts and mix until it forms one cohesive dough.
Roll the mixture into about 20 energy balls. Roll each ball in 50 g unsweetened shredded coconut, if using, then serve or chill until ready to eat.
Notes
Soak the Dates First: I always soak the dates in hot water because it makes them much easier to blend into a smooth, sticky paste. Just drain them well before processing so the mixture does not become too soft. Do not Over-Process the Walnuts: I blend them until they look like fine crumbs, but I stop before they turn oily. Keeping that light walnut texture gives the energy balls a better bite. Use Damp Hands for Rolling: When the mixture starts sticking to my hands, I lightly wet them with water. It makes shaping the balls much quicker and neater. Chill them Before Serving: I like to keep these in the fridge for at least 30 minutes before eating. They become firmer, less sticky, and even better for taking as a quick snack.
