- 50 g unsweetened shredded coconut - optional, for coating
Instructions
- Place 250 g pitted dates in a bowl and cover them with hot water. Let them soak for 10-15 minutes, then drain them very well.
- Add 200 g walnuts to a food processor and process until they form fine crumbs. Transfer the ground walnuts to a large bowl.
- Add the drained dates to the food processor and blend into a thick, sticky paste, scraping down the sides as needed. Add the date paste to the walnuts and mix until it forms one cohesive dough.
- Roll the mixture into about 20 energy balls. Roll each ball in 50 g unsweetened shredded coconut, if using, then serve or chill until ready to eat.
