These date and walnut energy balls are soft, naturally sweet, no-bake bites made with soaked dates and finely ground walnuts. They use two main ingredients, come together in a food processor and are easy to keep in the fridge for a quick snack.

A bowl of dates soaking on the counter and a bag of walnuts in the cupboard was enough to make a small batch in minutes. Now I often prepare these alongside Peanut Butter Bars or Chocolate Bark when I want a few homemade sweet snacks ready in the fridge without turning on the oven. 

The texture is the reason I keep this recipe so simple. The softened dates turn into a thick, sticky paste that holds the walnuts together without butter, syrup, or extra sweeteners. The walnuts stay lightly textured when they are processed into crumbs first, so the finished balls are chewy but not heavy. I also like rolling some of them in coconut because it adds a dry, delicate finish that works well on a no-bake plate with Oreo Balls or a slice of No-Bake Peach Cheesecake.

  • Pitted Dates: I soak the dates in hot water first because they blend into a smoother paste and hold the energy balls together more easily.
  • Walnuts: These give the recipe its rich flavor and soft, slightly crumbly texture without making the balls too dense.
  • Hot Water: This is only used to soften the dates, but it makes a noticeable difference when blending them.
  • Unsweetened Shredded Coconut: I use this as an optional coating when I want a little more texture and a neater finish.

How to Make Date and Walnut Energy Balls

1. Soak the Dates: Place the pitted dates in a bowl and cover them with hot water. Leave them to soak for 10 to 15 minutes until soft, then drain them very well. 

2. Process the Walnuts: Add the walnuts to a food processor and pulse until they become fine crumbs. Transfer the ground walnuts to a large bowl. 

3. Blend and Mix: Add the drained dates to the food processor and blend until they form a thick, sticky paste. Add the date paste to the ground walnuts and mix until there are no dry crumbs left. 

4. Roll and Coat: Roll the mixture into small balls. Leave them plain or roll them in shredded coconut, then serve straight away or chill until firmer.

Helpful Swaps

  • Use Pecans Instead of Walnuts: Replace the walnuts with the same amount of pecans for a softer texture and a more buttery flavor. 
  • Use Almonds Instead of Walnuts: Almonds work well, although they need a little longer in the food processor to become fine crumbs. 
  • Use Finely Chopped Walnuts Instead of Coconut: Roll the finished balls in extra walnut crumbs when you prefer to skip the coconut coating. 

My Best Tips for Date and Walnut Energy Balls

Keep the Portions Even: I use about 1 tablespoon of mixture for each ball so they all chill at the same rate and are easy to grab as a quick snack.

Roll the Balls before Coating Them: I shape the whole batch first, then roll them in coconut at the end. It keeps the coconut from sticking to my hands while I work.

Let the Mixture Sit Briefly if Needed: When the dough feels very soft after mixing, I leave it for 5 minutes before rolling. The walnuts absorb a little moisture, and the balls become easier to shape.

Storage

I keep these date and walnut energy balls in an airtight container in the refrigerator for up to 1 week, or freeze them for up to 2 months and let them sit at room temperature for a few minutes before eating.

Ingredients 
 

  • 250 g pitted dates
  • Hot water - for soaking
  • 200 g walnuts
  • 50 g unsweetened shredded coconut - optional, for coating

Instructions

  • Place 250 g pitted dates in a bowl and cover them with hot water. Let them soak for 10-15 minutes, then drain them very well.
  • Add 200 g walnuts to a food processor and process until they form fine crumbs. Transfer the ground walnuts to a large bowl.
  • Add the drained dates to the food processor and blend into a thick, sticky paste, scraping down the sides as needed. Add the date paste to the walnuts and mix until it forms one cohesive dough.
  • Roll the mixture into about 20 energy balls. Roll each ball in 50 g unsweetened shredded coconut, if using, then serve or chill until ready to eat.

Notes

Soak the Dates First: I always soak the dates in hot water because it makes them much easier to blend into a smooth, sticky paste. Just drain them well before processing so the mixture does not become too soft.  
Do not Over-Process the Walnuts: I blend them until they look like fine crumbs, but I stop before they turn oily. Keeping that light walnut texture gives the energy balls a better bite.  
Use Damp Hands for Rolling: When the mixture starts sticking to my hands, I lightly wet them with water. It makes shaping the balls much quicker and neater.  
Chill them Before Serving: I like to keep these in the fridge for at least 30 minutes before eating. They become firmer, less sticky, and even better for taking as a quick snack.
