- Sift the confectioners' sugar, and cocoa powder, over the cookie mixture. Add salt to the cookie mixture, and mix all ingredients until well combined.
- Whisk the rum with the honey or corn syrup in a small bowl until smooth. Pour this mixture over the dry ingredients and fold everything together with a spatula until fully combined and evenly coated.
- Scoop a tablespoon of the mixture (about 20g) and roll it into a ball.
- Set up four small bowls for the coatings: one with icing sugar, one with cocoa powder, and two with sprinkles. Roll each rum ball in your chosen coating, then place it in a mini baking cup. Repeat until all the dough is used.
