Easy Biscoff Rum Balls (No-Bake Holiday Treat Everyone Loves)

The holidays can get pretty busy for us grown-ups, decorating, shopping, baking, and hosting. It's fun, but it can also be a lot to handle. So, why not take a moment to treat ourselves? Let's make some rum balls. These easy no-bake rum balls, especially my biscoff rum balls variation, are one of my favorite sweet treats to prepare during the season. They taste even better after a day in the fridge and make the perfect festive treat to share or gift.

They come together quickly and have that perfect mix of nuts, cookies, and rum that everyone loves, just what you want from a good rum ball cookie recipe. They're great for holiday gifting and look beautiful when packed in a box. I like rolling them in sprinkles, cocoa, or powdered sugar for a festive touch. And because they taste even better after a few days in the fridge, they're the ideal make-ahead holiday treat.

  • Vanilla wafers or Biscoff Cookies & Cocoa: I love using Biscoff cookies for their warm, spiced caramel flavor, and a bit of cocoa powder adds a deep chocolate note that makes the mix taste rich and cozy. You can use vanilla wafers instead of Biscoff cookies.
  • Pecans & Salt: Chopped pecans give a lovely crunch and nutty balance, while a small pinch of salt ties all the flavors together.
  • Rum & Honey: Spiced rum brings warmth and aroma, and the honey helps bind everything, giving the rum balls that perfect chewy texture.
  • Dusting: I like to roll them in powdered sugar for a snowy look, cocoa powder for a chocolatey finish, or sprinkles when I want them extra festive.

👩🏻‍🍳How to Make Rum Balls

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

Process 1-4

1. Crush the Biscoff cookies into crumbs in a food processor, then transfer them to a large bowl.

2. Grind the pecans into crumbs in a food processor, then mix with the crushed Biscoff cookies in a large bowl.

3. Sift the sugar and cocoa powder over the cookie mixture and add salt.

4. Mix all ingredients until fully combined.

5. In a small bowl, whisk the spiced rum, honey, and vanilla until mixed.

6. Add the rum mixture to the dry ingredients and stir until combined.

7. Scoop a tablespoon (about 20g) of the mixture and roll it into a ball.

8. Roll each rum ball in the coating and chill the rum balls in the fridge for 1-2 hours.

  • Chocolate Rum Balls: Add melted dark chocolate or chocolate chips for a rich, chocolatey twist. You can even use chocolate rum for extra depth! Roll them in shaved chocolate or chocolate sprinkles for an indulgent touch.
  • Coconut Rum Balls: Mix in shredded coconut for a tropical flavor, or swap the spiced rum for coconut rum. Roll them in sweetened coconut for a beachy finish.
  • Coffee Rum Balls: Stir in espresso powder or strong coffee for a coffee-flavored rum ball. Coffee and chocolate are a perfect pair! Coat them in cocoa powder or a mix of cocoa and espresso for a delicious coffee-chocolate combo.

💭My Tips for Recipe Success

Let the Flavors Mingle: I always chill my rum balls before serving, at least a couple of hours, but overnight if I can wait. The flavors deepen beautifully, and the texture turns soft and fudgy.

Storage: I keep them in an airtight container in the fridge, where they stay perfect for up to a week. If I'm making them ahead, I freeze a batch, they hold up wonderfully and taste just as good once thawed.

Ingredients 

  • 300 g Biscoff Cookies - or Vanilla wafers
  • 150 g Pecans
  • 90 g Confectioners Sugar - Plus more for dusting
  • 2 tablespoon Cocoa Powder - Plus more for dusting
  • ½ teaspoon Salt
  • 100 ml Spiced Rum
  • 2 tablespoon Honey - or Corn syrup

Instructions

  • Crush the Vanilla waffers or Biscoff cookies into fine crumbs with a food processor and transfer them to a large bowl.
  • Put the pecans in a food processor and grind them into crumbs. Then, place them with the crushed Biscoff cookies in a large bowl.
  • Sift the confectioners' sugar, and cocoa powder, over the cookie mixture. Add salt to the cookie mixture, and mix all ingredients until well combined.
  • Whisk the rum with the honey or corn syrup in a small bowl until smooth. Pour this mixture over the dry ingredients and fold everything together with a spatula until fully combined and evenly coated.
  • Scoop a tablespoon of the mixture (about 20g) and roll it into a ball.
  • Set up four small bowls for the coatings: one with icing sugar, one with cocoa powder, and two with sprinkles. Roll each rum ball in your chosen coating, then place it in a mini baking cup. Repeat until all the dough is used.
  • Once coated, place the rum balls in the refrigerator to chill for at least 1-2 hours, allowing them to firm up and the flavors to meld.
  • Once chilled, your rum balls are ready to enjoy! Serve them as a sweet treat for parties, holidays, or as a delightful homemade gift.

Notes

Balance the Liquids: I like to adjust the rum and honey as I mix, just a little at a time, until the texture feels perfectly sticky and easy to roll.
