I love cheesecake balls for their simplicity, with no baking and cooking involved. You only need a few ingredients: cream cheese, powdered or granulated sugar, vanilla extract, and cookies or graham crackers.

  • Cream Cheese: For the creamiest, tastiest cheesecake bites, go for full-fat cream cheese. Make sure it's nice and soft before you start mixing, so your filling turns out smooth without any lumps. Trust me, it makes all the difference!  
  • Salted Butter: Adding butter brings so much flavor and richness to your cheesecake balls. I prefer using salted butter because it balances out the sweetness. And don't forget to let it come to room temperature so it blends in smoothly! 
  • Powdered Sugar: Sugar sweetens up these balls perfectly. Remember to use powdered sugar, not granulated, to keep them nice and smooth without any graininess. 
  • Tea Biscuits: The crumbs from the tea biscuits help hold everything together in these cheesecake balls. If you don't have any, graham crackers work just as well. They add a lovely texture that's just right! 
  • Vanilla Extract: I'm a big fan of vanilla bean paste because it brings out such a rich flavor! But if you don't have any, vanilla extract works just as great. Just use the same amount, and you'll still get that lovely vanilla taste. 
  • Cinnamon Powder: I enjoy adding a touch of cinnamon for that extra bit of warmth and spice. It gives a lovely flavor twist that's just delightful! 

For Rolling:

  • Tea Biscuits (for Rolling): I love rolling these balls in crushed tea biscuits! It gives them such a nice crunch and adds even more flavor.  
  • Rainbow Sprinkles: I love rolling these balls in sprinkles! It makes them look so cheerful and playful. But if you're a chocolate fan, dipping them in melted semisweet chocolate is just as tasty and fun!

1. In a big bowl, combine cream cheese, salted butter, powdered sugar, vanilla extract, and cinnamon powder. Mix until smooth and well blended.

2. Use a food processor to crush the tea biscuits into fine crumbs.

3. Add 230 g of tea biscuit crumbs to the cream cheese mixture. Place the remaining crumbs in a small bowl and set them aside.

4. Gently mix in the crushed tea biscuits until they are evenly spread throughout the mixture.

5. Put the mixture in the freezer for 2 hours to harden. Then take the bowl out of the freezer. Roll small portions of the cheesecake mixture into balls with your hands.

6. Place the rolled cheesecake balls on a baking sheet lined with parchment paper. Freeze them for 2 hours to harden.

7. Roll half of the cheesecake balls in the crushed tea biscuits and the other half in the rainbow sprinkles until they are evenly coated.

8. Put the coated cheesecake balls back on the parchment-lined baking sheet. Freeze them for at least 1 hour to make them firmer.

  • Chocolate Chip Cheesecake Balls: You can add mini chocolate chips to the cheesecake mixture before shaping them into balls. And for that classic chocolatey touch, rolling them in crushed graham crackers or cocoa powder is just perfect. 
  • Fruit Swirl Cheesecake Balls: You'll love swirling in some fruit preserves or puree like raspberry, strawberry, or blueberry into the cheesecake mixture before shaping them into balls. Then, rolling them in finely chopped nuts or shredded coconut gives them a lovely crunch.

Ingredients 

For Cheesecake Balls:

  • 200 g Cream Cheese
  • 1 tbsp Salted Butter
  • 200 g Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon Powder
  • 230 g Tea Biscuits

For Rolling:

  • 40 g Tea Biscuits
  • 90 g Rainbow Sprinkles

Instructions

  • In a large mixing bowl, add cream cheese, salted butter, powdered sugar, vanilla extract, and cinnamon powder. Mix until smooth and well combined.
  • Crush the tea biscuits into fine crumbs with a food processor.
  • Add 230 g tea biscuits crumbs to the cream cheese mixture. Put the rest of the tea biscuits crumbs in a small bowl. Set aside.
  • Fold in the crushed tea biscuits until evenly distributed throughout the mixture.
  • Place the mixture in the freezer for 2 hours to harden.
  • Remove the bowl from the freezer. Take small portions of the cheesecake mixture and roll them into balls using your hands.
  • Once rolled, place the cheesecake balls on a baking sheet lined with parchment paper. Freeze for 2 hours to harden.
  • Roll half of the cheesecake balls in the crushed tea biscuits and the other half in the rainbow sprinkles until they're evenly coated.
  • Place the coated cheesecake balls back on the parchment-lined baking sheet.
  • Once all the cheesecake balls are coated, freeze them for at least 1 hour to firm up.
  • Once chilled, your cheesecake balls are ready to serve! Enjoy them as a delicious treat or dessert.

Notes

Room Temperature Ingredients: Make sure your cream cheese and butter are at room temperature before mixing. This allows for easier blending and smoother consistency in the cheesecake mixture. 
Consistency of Cheesecake Mixture: Aim for a smooth and creamy consistency in the cheesecake mixture. Ensure that all ingredients are well incorporated to avoid lumps.  
Uniform Size: Try to roll the cheesecake balls into uniform sizes to ensure even cooking and consistent presentation. 
Use Oil: Rub oil on your hand before shaping the balls.
