These No-Bake Cheesecake Balls have all the creamy flavor of classic cheesecake in a quick, bite-sized form. Made with just basic ingredients, they're easy, fun, and perfect for parties or a simple sweet treat.

These no-bake cheesecake balls have become one of my favorite treats to keep in the freezer. They're simple, fun to make, and perfect for birthdays and holidays. I love how easy they are to prep ahead, just mix, chill, and roll. The texture turns out beautifully every time: rich, smooth, and slightly crumbly, just like classic cheesecake but in bite-sized form.

I usually make a mix of coatings, some rolled in biscuit crumbs, others in sprinkles, and they always disappear fast, especially when there are kids around. The base is made with cream cheese, a touch of cinnamon, and graham cracker crumbs, which come together into a soft dough that firms up nicely in the freezer. They're the kind of no-bake dessert that feels special but takes barely any time at all.

1. In a large bowl, mix cream cheese, salted butter, powdered sugar, vanilla, and cinnamon until smooth. Stir in crushed tea biscuits, saving some crumbs for coating.

2. Freeze the mixture for 2 hours, then roll it into small balls using your hands.

3. Place the balls on a parchment-lined tray and freeze again for 2 hours.

4. Roll half in reserved tea biscuit crumbs and the other half in rainbow sprinkles. Freeze 1 more hour until firm, then enjoy!

📖Variations

  • Chocolate Chip Cheesecake Balls: You can add mini chocolate chips to the cheesecake mixture before shaping it into balls. And for that classic chocolatey touch, rolling them in crushed graham crackers or cocoa powder is just perfect. 
  • Fruit Swirl Cheesecake Balls: You'll love swirling in some fruit preserves or puree, like raspberry, strawberry, or blueberry, into the cheesecake mixture before shaping them into balls. Then, rolling them in finely chopped nuts or shredded coconut gives them a lovely crunch.   
  • Nutty Nutella Cheesecake Balls: You can mix Nutella into the cheesecake mixture for a rich hazelnut flavor. Then, roll the balls in chopped hazelnuts or cocoa powder for an irresistible treat.  

💭My Tips for Recipe Success

Rub a Bit of Oil on Your Hands: I rub a little oil on my palms before rolling. It keeps the mixture from sticking and makes shaping the balls so much easier. 

Let Them Soften Before Serving: I take them out of the freezer about 10 minutes before serving, just enough to get that creamy texture without them going too soft. 

Storage: I freeze the leftovers in a container with parchment between the layers. It keeps them from sticking and makes it easy to grab one anytime.

Ingredients 

For Cheesecake Balls:

  • 200 g Cream Cheese
  • 1 tbsp Salted Butter
  • 200 g Powdered Sugar
  • 1 teaspoon Vanilla Extract - Optional
  • 1 teaspoon Cinnamon Powder - Optional
  • 200 g Graham Crackers - Crumbs

For Coating:

  • 40 g Graham Crackers - Crumbs
  • 90 g Rainbow Sprinkles - Optional

Instructions

  • In a large mixing bowl, add the cream cheese, salted butter, powdered sugar, vanilla extract, and cinnamon powder. Mix until smooth and well combined.
  • Crush the graham crackers into fine crumbs using a food processor.
  • Reserve 3 tablespoons (40 g) of graham cracker crumbs, then add the remaining graham cracker crumbs to the cream cheese mixture.
  • Fold the graham cracker crumbs into the cream cheese mixture until evenly combined.
  • Place the mixture in the freezer for 2 hours to harden.
  • Remove from the freezer and roll small portions of the mixture into balls using your hands.
  • Place the rolled cheesecake balls on a parchment-lined baking sheet and freeze for another 2 hours.
  • Roll half of the cheesecake balls in the reserved graham cracker crumbs and the other half in the rainbow sprinkles until fully coated.
  • Place the coated balls back on the parchment-lined baking sheet.
  • Freeze for at least 1 more hour to firm up before serving.

Notes

Mix Until Super Smooth: I like to beat the cream cheese mixture until it's completely creamy and lump-free; it makes the balls extra soft and velvety.
Crush Graham Crackers Finely: I pulse them in the food processor until they’re really fine. It helps them blend in perfectly with the creamy filling. You can also experiment use other types of cookies instead of graham crackers.
Chill the Mixture Firm: I always let the mixture freeze fully before rolling; it makes shaping the balls so much easier.
Coat Right After Rolling: I roll the cheesecake balls in the toppings while they’re still a little firm but not rock solid; this helps everything stick better.
