These date energy balls combine naturally sweet dates, finely ground walnuts, and toasted seeds with a simple sesame coating. They require only five ingredients, no oven, and make 12 convenient snack-size balls.

How to Make Date Energy Balls

1. Soak the Dates: Cover the pitted dates with hot water and leave them to soften for 10 minutes.  

2. Prepare the Nuts and Seeds: Process the walnuts until finely ground. Toast the sunflower and pumpkin seeds in a dry skillet, stirring regularly.  

3. Combine the Mixture: Drain and process the dates into a thick paste, then mix them with the ground walnuts and toasted seeds.  

4. Shape and Coat: Divide the mixture into 12 portions, roll each portion into a ball, and coat it with sesame seeds.

Tips for Date Energy Balls

Weigh the Ingredients: I prefer using a kitchen scale because dates, walnuts, and seeds can vary considerably when measured by volume.  

Mix Everything Thoroughly: Take a little time to work the date paste evenly through the walnuts and seeds so every ball holds together properly.  

Portion before Rolling: I divide the mixture into 12 portions before shaping. This helps me keep all the date energy balls approximately the same size.  

Press before Shaping: If a portion feels loose, gently compress it between your fingers before rolling. I find this makes it much easier to create a neat, compact ball. 

Storage

I keep the date energy balls in an airtight container in the refrigerator until I am ready to serve them. Keeping them covered also protects the sesame coating and helps prevent the balls from drying out.

Date Energy Balls

Ingredients 
 

  • 150 g pitted dates
  • Hot water - for soaking
  • 100 g walnuts
  • 50 g sunflower seeds
  • 50 g pumpkin seeds
  • 20 g sesame seeds

Instructions

  • Place 150 g pitted dates in a bowl, cover them with hot water, and soak for 10 minutes.
  • Add 100 g walnuts to a food processor and pulse until finely ground. Transfer the walnuts to a large mixing bowl.
  • Place 50 g sunflower seeds and 50 g pumpkin seeds in a dry skillet. Toast them while stirring regularly, then add them to the ground walnuts.
  • Drain the soaked dates thoroughly. Transfer them to the food processor and blend until they form a thick paste.
  • Add the date paste to the walnut and seed mixture. Stir thoroughly until everything is evenly combined.
  • Take small portions of the mixture and roll them between your palms to form date energy balls.
  • Place 20 g sesame seeds in a small bowl. Roll each ball in the sesame seeds until evenly coated, then arrange them on a serving plate.

Notes

Drain the Dates Well: I let the dates drain thoroughly after soaking so the mixture does not become too soft or sticky.  
Keep some Texture: I process the walnuts until finely ground but stop before they turn into walnut butter.  
Watch the Seeds Closely: Sunflower and pumpkin seeds can darken quickly, so I stir them regularly while they toast.  
Coat them Straight Away: I roll each ball in the sesame seeds as soon as I shape it because they stick more easily while the surface is still moist.
