This easy guacamole recipe is creamy, fresh, and ready in 5 minutes with ripe avocados, tomato, spring onion, jalapeño, lime juice, salt, and extra virgin olive oil.
Cut 2 ripe avocados in half, remove the pits, and scoop the flesh into a mortar or medium bowl. Mash the avocado with a pestle or fork until you reach your preferred texture, keeping it slightly chunky or smoothing it out more if preferred.
Add 1 diced medium tomato, 1 chopped spring onion, and 1 finely chopped jalapeño chili to the mashed avocado. Pour in the juice of ½ lime, add 1 teaspoon salt, and drizzle with 2 tablespoons extra virgin olive oil.
Mix everything together until well combined, then taste and adjust with extra lime juice or salt if needed.
Spoon the guacamole back into the avocado skins for serving if desired, and serve immediately with tortilla chips.
