These easy homemade waffles are golden and crisp on the outside, soft and fluffy in the center, and made with simple pantry ingredients. They're perfect for breakfast, brunch, or freezing for later.
Preheat the waffle maker according to the manufacturer's instructions.
In a large bowl, whisk together 2 cups (240 g) all-purpose flour, ¼ cup (50 g) granulated sugar, 1 tablespoon baking powder, and ½ teaspoon salt.
In a separate bowl, whisk together 2 large eggs, 7 tablespoons (100 g) melted unsalted butter, 1¾ cups (420 ml) whole milk, and 1 teaspoon vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and whisk gently until just combined. A few small lumps are fine.
Lightly grease the waffle iron with cooking spray or butter.
Pour about ⅓ cup batter into the waffle iron, or the amount recommended by your waffle maker.
Cook until the waffles are golden brown and crisp.
Transfer the waffles to a wire rack and repeat with the remaining batter. Serve warm with your favorite toppings.
Notes
Don't Overmix the Batter: I mix just until the flour disappears. Keeping a few small lumps helps the waffles stay light and fluffy.Preheat the Waffle Iron Fully: I always wait until the waffle iron is completely heated before adding the batter. This helps create a crisp exterior.Cook Until the Steam Slows Down: I usually wait until most of the steam has stopped before opening the waffle maker. This gives the waffles better color and texture.Use a Wire Rack: I place the waffles on a wire rack instead of stacking them so they stay crisp while I cook the remaining batter.
