This easy peanut butter fudge is rich, smooth, and made with just 5 simple ingredients. It comes together quickly on the stovetop and sets into creamy squares that are perfect for a simple dessert or homemade treat.
Cut the unsalted butter into pieces, then add it to a saucepan with the peanut butter. Place over medium heat and stir until everything is melted, smooth, and well combined.
Bring the mixture to a gentle boil, stirring occasionally, then remove it from the heat.
Add the salt, vanilla paste, and powdered sugar, and stir until the mixture is smooth and fully combined with no lumps.
Pour the mixture into a square baking dish lined with parchment paper, leaving some overhang on the sides. Spread it out evenly with a spatula.
Let the fudge cool at room temperature for 2 hours, then refrigerate for 1 hour, or until firm enough to cut.
Lift the fudge out of the dish using the parchment paper, place it on a cutting board, and cut into squares. Arrange on a plate and serve.
Notes
Use Smooth Peanut Butter: Regular smooth peanut butter gives the fudge the creamiest texture, and I find it also helps everything melt evenly.Do Not Overcook: I remove the mixture as soon as it reaches a gentle boil to keep the texture smooth and not crumbly.Line the Pan Properly: Leaving some parchment overhang makes it much easier, and I can lift the fudge out cleanly for slicing.Let It Set Fully: I find the fudge cuts much better once it has cooled at room temperature and then chilled properly in the fridge.
