This Italian dressing is made with extra virgin olive oil, white wine vinegar, lemon juice, Dijon mustard, honey, garlic, Italian seasoning, and Parmesan cheese. It comes together in minutes and works well for salads, pasta salads, vegetables, and marinades.
Add 120 ml extra virgin olive oil, 3 tbsp white wine vinegar, 1 tbsp lemon juice, 1 tsp Dijon mustard. 1 tbsp honey, 1 clove garlic (minced), ½ tsp onion powder, 2 tsp Italian seasoning, ½ tsp salt, ¼ tsp black pepper, and 3 tbsp grated Parmesan cheese to a jar with a tight-fitting lid.
Seal the jar and shake vigorously until well combined and smooth.
Taste and adjust seasoning if needed.
Store in the refrigerator for up to one week. Shake well before each use.
Notes
Blending for Creaminess: For a creamier texture, blend the ingredients in a blender until smooth. It creates a silky consistency that's perfect for drizzling over salads.Let the Flavors Develop: I like to refrigerate the dressing for at least 30 minutes before serving because the garlic, herbs, and Parmesan taste better once they have time to blend.Shake Before Serving: The oil and vinegar naturally separate as the dressing sits, so I always give the jar a good shake before using it.Adjust the Consistency: If the dressing thickens in the fridge, I let it sit at room temperature for a few minutes, then shake it again until smooth.Storage: I keep this dressing in an airtight jar in the refrigerator for up to 1 week.
